Breadmaker wholemeal rolls

Help.

I know there are loads of threads of breadmaking but I could do with an answer pretty sharpish.

I have made the dough (wholemeal) in my bm and I have shaped them and they are supposed to be proving ready to bake. It says they should double in size in approx 25 mins. I have turned the oven on low and they are on the grill bit.

My question is how long should they be baked for? At what degrees centrigrade please. I usually just make loaves but am following a diet plan and think the rolls will be more adaptable for now. Do they rise double and if not will they be ok??

    200 degrees centigrade.Try 20 minutes in the oven and then pick one up and tap on the bottom to see if it sounds hollow.If not,put it back for another 5 and try again,etc.
    They should get bigger but may not reach double size.Remember they will grow a little bit in the oven too.

    Yes they should rise to double the size but I made some granary ones the other day that didn't. I don't really think I gave them long enough though as it wasn't until I was in the middle of a physiotherapy session that I realised I had forgotten to put the bread on!

    I usually start rolls at 200 degrees (gas mark 6) for 10 minutes then turn it down to 180 (GM4) for 10 minutes and that is enough. Like bread, if you turn them over and tap the bottom and they sound hollow then they are cooked. I use a fan assisted oven so they would take a little longer in gas oven or standard electric.

    I found they don't actually double if you are using wholemeal - I left them for longer because they hadn't doubled in the time and they just collapsed once they got to a certain point. I now put them on the baking tray reasonably close together and when they have grown enough to touch each other I bake them
    It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!

    What's the best place/temperature to leave dough to prove?

    My kitchen is too cold an draughty in winter as the window is always open but I had read somewhere that you can use the microwave or an oven on low. Does this work and what's the best way to do it?

    I use a low oven. I also cover them with a damp tea towel which is folded in the middle. This stops a crust forming on the dough which prevents rising. The fold in the tea towel allows it to "give" when the rolls start to rise.

    I let them rise to almost double, at normal room temp or if I'm in a hurry, the airing cupboard or microwave (pulse for a few seconds at a time, leaving 30 seconds in between), then cook at 200C for about 15-20 minutes till they sound hollow when tapped.
