Hi Peeps
So today I've set myself the challenge of writing a meal plan for the month. Whilst going through the cupboard and fridge I have a few items that I want to use up today and tomorrow. The first is half a tub of soft cheese. Also on the list is lots of chorizo sausage followed by mozzarella cheese and a part baked crusty bread ( that you finish in the oven). I have plenty of other cupboard ingredients that I can use with them and they don't have to all be in one dish...... Would love some inspiration on what to cook other than soft cheese bread rolls :rotfl:

I'm really not sure what extra ingredients you've got, but I'd cook:
Toasted cheese bread and soup = bread, mozzarella, (needs tomato puree, soup)
Toasted pizza bread = chorizo, bread, mozzarella, (needs tomato puree, salad)
Cheat's Carbonara = (needs pasta), soft cheese, chorizo
Chorizo Pasta bake = (pasta, tomatoes, peppers, paprika), chorizo
You get the idea...That sounds like a classic case of premature extrapolation.

How about mixing the soft cheese with sweated onions and bacon and then stirring through cooked pasta. You could even use the chorizo instead of bacon.
I would also make a kind of pizza thing by splitting the unbaked rolls, topping with tomato/BBQ sauce, chorizo and mozzarella. Cook in oven untill golden and the cheese is all melty.

You could make a pizza bread. Either hollow out the bread and fill with mozarella, chorizos and some tomato sauce or slice the bread and put the filling on top.
I use soft cheese instead of cream for soup or pasta sauces or instead of butter on bread. Especially nice lemon curd on top.Fashion on the Ration 2022: 5/66 coupons used: yarn for summer top 5 /

This has become one of my favourite recipes - and very adaptable.

If you've got lots of chorizo, freeze it in pieces for adding to recipes in future.0
