Need ideas for expired milk that's still good

Hi All
I got some milk from work ( I work as a cook at a daycare centre) that was a day over its expiry, the milk still tastes ok and my plan was to make ice cream but all the recipes require cream which I don't have (and i'm trying to use what I already have).
Anyone have any ideas for the milk besides smoothies and milk shakes please???

    Custard powder (not the just add water sachets), sugar and milk.


    Hot chocolate, made with milk instead of water is also really nice too.

    How about a cheese or white sauce?

    Milk that is on the turn but still good makes the BEST scones or pancakes!

    You could also make some quick soft cheese....gently heat the milk, add a little lemon juice (or vinegar)...it should start to curdle immediately, if not heat a little more...stir gently as the curds form...take it off the heat and cover and let it cool before straining...the curds are now your soft cheese (somewhere between cottage cheese and quark) the whey that you drained off is high in protein and can be drunk or added to home made bread....the cheese WILL be bland, add some herbs, chives work well, or maybe some pepper or even garlic

    I too would say scones or pancakes, they can be cooked cooled and frozen for re-heating later pancakes stck with some greaseproof paper between so you can use as many or as few as you want I sometimes make scones and roll the dough into a sausage shape, and freeze, cut through almost so I can use a couple at a time.OrI would be eating them all the time as I live alone

    Pancakes-either the traditional sort or the thicker breakfast pancakes. Then freeze them as Jackie suggested. It's Shrove Tuesday next week.

    If it still smells and tastes ok and none of the suggestions above are suitable, just freeze it in small quantities and use in drinks.

    To buy yourself some time, you can bring it to the boil and let it cool, and it will keep another couple of days.
