Now then I did mine in the remoska but I will give the oven version and then add the remoska version for anyone else who has one
BRAISED LAMB SHANK RECIPE
SERVES 4
3 syns per serving on Red/EE- 4 lamb shanks (fat removed)-I used 2 as there is no way we can eat a whole one each
- 2 red onions -thinly sliced
- 2 cloves garlic -crushed/grated
- 100ml balsamic vinegar (now I liked the full amount but it might be a bit much for some -so you can always start off with less and add more if you like it ..)
- 300ml red wine (11)
- 2tbs tomato puree (1)
- sprig rosemary -I used 1 tsp of dried
- 150ml hot water
- 2 oxo cubes -I used lamb
- seasoning
- pre-heat oven to 150c/130fan/gas2
- heat a large casserole on the stove and drop in the lamb shanks to colour.
- remove the shanks onto a plate
- drop the onions into the pan and cook for a couple of minutes
- add in the tomato puree, garlic, stock cubes and rosemary and sit over the heat for a couple of minutes
- add the balsamic and wine and bring to the boil, add in the water
- drop the lamb shanks, cover and cook for approx 2.5hrs until the meat is tender
- remove the lamb from the pan and keep covered and warm
- place the casserole on the stove and boil the sauce down to the consistancy you like and season to taste
- serve...
Ok -so a quick remoska version....- drop the shanks in the remoska and switch on -cook for about 30mins until coloured
- take them out and add in the onions and cook down for about 10 mins
- stir in the puree, garlic, stock cube and rosemary -cover with foil and cook for about 20mins
- pour in the wine and balsamic (no need for the 150ml water)
- add the shanks back in -cover with foil and cook until tender

Now I have tred all sorts of home made burgers but this one is IT :jand I know some of the ingredients might sound a bit odd -but trust me -NOMNOMNOM
Ox burger
makes 6X100g burgers- 500g extra lean minced steak
- 1 onion -finely chopped
- 1tbs capers - well chopped
- gherkin-finely chopped - (about 1tbs once chopped)
- 1tsp wholegrain mustard (0.5)
- 1tsp worcestershire sauce.
- 2tbs fat free natural yoghurt
- Squish everything together with your hands and chill for about 1hr
- break of 100g pieces and shape into patties (I have a burger press )
- place back in the fridge until required
- heat a non-stick frying pan and cook drop them in and let them seal before turning over and cooking the other side -I cooked them on a fairly high heat to stop them losing all their juices

Righty-ho then the Leonslaw, Is a lovely winter coleslaw thingy.... and is:-

serves 8
0.5syn per serving- 1 raw beetroot -peeled n grated
- 1 large carrot -grated
- 1/4 small celeriac -peeled n grated
- 1/4 small cabbage -finely shredded
- 1/4 red cabbage -finely shredded
- 2 sticks celery -finely sliced
- approx 30g pickled gherkin -roughly chopped
- 2tsp cumin seeds -toasted
- 1/2 tbs white wine vinegar
- 2tsp extra virgin olive oil (4)
- mix all the veggies together
- mix the dressing ingredients together
- then mix all together -tada
I hope you all like it as it is a serious hit of goodness in this cold weather-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
Now I use my slow cooker -but you can always do it in the oven (you will need to add 350ml of water though)
Mechado beef stew
serves 4
1 syn per serving on Red/EE- 600g braising steak - cut into bite size chunks
- 1 medium onion -finely chopped
- 2 cloves garlic -grated/minced
- 2 large carrots -finely diced
- 2 red peppers - finely diced
- 1 bay leaf
- juice 1/2 lime
- 2tsp sugar 2
- 2 large tomatoes -peeled and chopped
- 1tbs tomato puree - 0.5
- 1tbs tomato ketchup - 1
- 2tbs soy sauce
- 1 oxo cube
- drop the diced beef in the slow cooker and switch on -I use high..... you can brown the meat if you prefer
- cook for about 1hr
- ad the crumbled oxo, puree, ketchup, garlic, soy, sugar and lime juice and mix well
- add in everything else and stir
- switch onto auto and cook until the meat is tender
- if you need to you can strain off the liquid toward the end and reduce down -but we didn't need to.
- oooh remove the bay leaf and serve
The only thing I changed the next time was to cut the meat smaller so its more evenly distributed Im also going to try making it with minced steak-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -

cheesy bacon lasagne
serves 4
EE = 1heA+1.5-ish syns
Green = 1heA+5.5 -if synning the bacon- 1/2tsp oil (1)
- 1 large onion -chopped
- 2 cloves garlic - grated
- 120ml hot water
- 1 oxo -I used lamb
- 200g bacon(14)(chopped) -weight after all fat removed
- 400g mushrooms -I used frozen ones defrosted and squeezed out
- carton passata
- 1tsp dried mixed herbs
- slosh of balsamic
- seasoning
- heat the oil in a large non-stick frying pan
- add the onion and cook for a couple of minutes
- add the garlic and the oxo and hot water -bring to a bubble and then reduce down and cook until the liquid has evaporated and the onions are sticky
- throw in the bacon and mushrooms and cook for about 5 mins
- add the herbs, balsamic, passata and bubble ove a low heat until thickened -season
- 375ml semi (1.5xA)
- 5tsp cornflour (5) let down with a little of the milk
- 1tsp English mustard (0.5)
- seasoning
- 105g low fat cheddar or 70g full fat (2.5XA)
- warm the milk
- add the conflour mix and stir until thickened
- add mustard and seasoning

Mrs Mcawber - all those lovely sw recipes are making me hungry!!! I haven't posted probably for a couple of years but have been lingering in the background. I find I spend far too much time on here and far too little on what I should be doing. Anyway thank you for all the lovely meal ideas.
