It's the boyfriend's birthday at the weekend, and I'd like to make a cake that he can share when we're celebrating at the pub with our friends. He'd like something indulgent and preferably chocolatey, so I was thinking along the lines of a torte or truffle cake. However, one of his friends is allergic to dairy and another is vegan. I can manage to substitute the butter/milk with marge and soy milk, but what do I do about eggs/cream? Anyone got any good recipes for vegan cakes/desserts that are tasty enough for the rest of us?

chocolate orange sponge cake
ingredients for sponge
300g white SR flour
2 tsp baking powder
2 heaped tbsp cocoa powder
175g soft brown sugar
180ml water
100ml sunflower oil
ingredients for chocolate orange icing
170g sifted icing sugar
60g sifted cocoa powder
115g dairy free margarine (i use vitalite)
1 sm orange use the zest and some of the juice
preheat oven to 180*C/350*F/gas 4
grease and base line two 7 inch round tins
method
sponge
mix the oil sugar and water in a saucepan and heat until the sugar has disolved.
put all dry ingredients into a bowl and mix together well.
when liquid mixture has cooled slowly fold the dry ingredients into the saucepan. fold carefully rather than beating and the cake will rise better.
pour mixture into the tins and bake in the centre of the oven for about 30 mins. when cooked place on wire rack to cool.
icing
beat the margarine in a bowl until soft, gradually add the icing sugar and cocoa powder beat until smooth, then add the orange juice/zest a little at a time untill you are happy with the constituency. you DONT need much .
use half the icing mixture to stick the two halves together and spread the rest on the top of the cake.
we love this cake and make it regularly but i double the sponge ingredients to get a nice tall cake if you do that dont double the icing quantities or you'll end up with too much.

If they can eat nuts, go for macadamia cream (you can use other nuts instead but macadamias are heavenly). Soak a handful of nuts in the juice of half an orange for a couple of hours, then blend until smooth. A friend made this for me when she was following a rawfood diet and it's gorgeous with fresh fruit.0

This is a favourite at Christmas
and is like a truffle cake
Crush some diary free biscuits - valuebourbons are fine - just scrape the cream off cos you don't need it.
Put them in the base of a round dish
Melt 400g of plain chocolate (check that it is diary free) in a bowl over hot water
Add 2 cartons of Alpro Soy Dream (Tesco sell it) and 1 tablespoon of glucose syrup and mix around. if you wish you could add alcohol to flavour - rum is good
