Packed Lunch Ideas

Every so often my DS2 gets very fed up of bread but I won't pay the high price of school lunches. Thought you might like to share a couple of ideas for things I've given him lately that he has loved and requested more of:-
1) Take a slice of bread cut fairly thickly with crusts removed. Butter one side and turn over. Put a cooked sausage on one end and roll up with buttered side on outside, secure with 2 cocktail sticks bake until golden brown. cool completely and remove coctail sticks. I don't know where I got this recipe from - I read it "somewhere" - if it was here then thank you to whoever posted it originally
2) warm and slit a pitta bread, fill with cheese (spread some tomato puree inside too if liked) Either grill, oven bake or cook on george forman grill until cheese melts and pitta goes golden brown. Cool and wrap. These are like inside out pizza's but less messy to eat.

they sound great thanks, how old is your ds ?, my daughter is 13 (tomorrow), and she goes through phases of what she has for lunch, at the moment its pasta bake, which she will eat cold, this has been going on for a while now :rolleyes: , but its really easy make up a batch on a monday and voila done xx0

Thanks taurusgb! These are great. I get so sick of wraps (the sarnie of the moment with my OH!) so the pitta sounds good. I don't think the sausage one would last til the next day :rotfl:

Just made some bacon and potato scones for tomorrows lunches. Tried one to test (oh the responsibilities heaped upon us poor mothers
) and they are lovely:-
Makes 12 large Scones
12 oz SR flour
2 tsp baking powder
1/2 tsp salt
4 oz margerine or butter
8 oz left over mashed potato
2 rashers cooked bacon chopped
8 tblsp milk
put flour, baking powder and fat into bowl and rub in until resembles fine breadcrumbs
add potato and rub into mixture
add bacon, salt and stir to mix
add milk and form into soft dough
Roll out into oblong and cut into 12 squares (or use round cutters if your not as lazy as I am)
Bake in preheated oven at 220C for 12-15 minutes until golden brown and cooked through.People Say that life's the thing - but I prefer reading

My DS2 is 12 but my DD2 who is 17 is as bad as he is at getting fed up with packed lunches so I am on a continuous loop of thinking up different things that are healthy, easy to prepare, travel well, don't cost a fortune and can be made in advancePeople Say that life's the thing - but I prefer reading

i start the world of packed lunches next week when DS starts for the 1st time as he is fed up of school dinners. As a child I wasn't keen on sandwiches (still not that keen now), i can remember having crackers, cold meatloaf, cold chicken drumsticks or a flask of soup0

I like salads with interesting leaves and I copy the Dutch and add some peeled orange segments or strawberries when in season.
I enjoy small filled baps (my fav. cheese, ham, tomato, beetroot and raw onion), mixed leaves and a piece of fruit. Sometimes, I will have a flask of homemade soup and a roll.0 -
I like to fry and cook sausages, then slice them up and slip them into pitta bread along with a splash of sweet chilli sauce.
I did try a different direction for the cutting last time - so they ended up elongated egg-shaped slices. Seemed to work better than big chunks.
Another combination is: slices of sausage, with scrambled egg + brown sauce.0
