Spotted this on the River Cottage Road Trip...
1kg of bashed rosehips into 2 litres of boiling water. Bring to the boil and take of the heat and leave for 30 minutes to infuse.
Sieve in a jelly bag, put the pulp back in the pan, bash some more and sieve again.
Add 1 kg of caster sugar and dissolve and boil the mix hard for 5 minutes and now you can bottle it.
He uses this in a punch which just appeals to me
But it's also packed with vitamin C and is very good for you during the winter and the colour is just so delightful that I think it would make a great addition to any home made hamper
