Where can we go for £500?!

My boyfriend and I are looking for a holiday for a week from around the 6-10 June, but not travelling on the 8th - it's my birthday and don't want to be travelling! We've looked on the usual sites - lastminute and first choice, but can't seem to find anywhere to go. Ideally we'd like half board or all inclusive, but they just seem to be out of our price range or not on the dates that we want to travel.
Any ideas greatly appreciated!
