Irish themed basket for 68 year old man

Was thinking of doing an Irish basket for my FIL. He is disabled, has no hobbies and is diabetic. He spends 3 months in the summer at his house in Ireland, the rest of the time he lives here. He wants to go back there to live but his wife still works here (and doesnt really want to go!)
We're always stuck with what to get him, so I thought an Irish hamper might go down well. Not sure if I'll be able to get much though, so ideas please.
Was thinking
soda bread
barm brack (both in Tesco or M&S)
what else?

Some good suggestions, thanks. He drinks Jamesons. Will take a look at the flights and see what I can do. Could be out of my budget though.
My OH likes Taytos but cant imagine his Dad eating them. He loves his Irish spuds though lol“A budget is telling your money where to go instead of wondering where it went.” - Dave Ramsey0 -
You might be able to find a calender of irish scenery if you hunt online. Some ideas on this website too...

Found return flights in January at 0.01p each way for 2 people total £33.00. Also Ryanair do gift vouchers from £20. Will ask OH about that.“A budget is telling your money where to go instead of wondering where it went.” - Dave Ramsey0

Irish-themed playing cards? A charity website in Ireland is selling them for £5.99-ish.
If he reads, maybe an Irish-themed bookmark and some books?
Do you have any photos of him in Ireland? How about framing one for him.
