Quesadillas - anyone make them?

I've been experimenting with quesadillas (2 soft tortillas filled with 'stuff' then heated in a frying pan till they are crisp and the filling is hot - a Mexican toastie really) we've had cheese & chutney and cheese & onion and the favourite so far - tuna, cheese & onion, anyone got any more ideas? I've googled it and the recipes are just a bit too American for what were were looking for.

  • i make these didnt know they were called quesadillas mind ,i makle these to use up veg e.g toms sweet corn mushroom garlic courgettes with lots of cheese yummy

    These are a big fav in our house, we've actually got a quesadillia maker (basically a round sandwhich toaster thing - seals the edges nicely).

    We have loads of different ones,

    Tuna and sweetcorn with tomato sauce
    Pepperoni, fried peppers and onions
    DD2 loves baked beans and cheese
    A thin layer of chilli is nice (especailly with guacamole)
    chopped sausage and beans
    Fried onions, carrots, celery, peppers and courgette with some seasonings (normally paprika).

    Nice with a sour cream dip.

    I tend to use cheese, onions and some tobasco sauce...yummm :drool:

  • Thanks for the inspiration guys :T I get into such a rut sometimes -it's as if I back myself into a corner food wise and need encouragement to get me out. all of the ideas in the links are great but why didn't I think of them? :o none are really unusual or extreme .....I dunno, brain paralysis I think....:confused:
  • I always fill mine with salsa, chicken and grated cheese - ooh I haven't had these in ages - guess what we're having tonight :D

  • Hi, don't know if you're still looking for inspiration. We occasionally do pizza toppings in ours (tomato puree, cheese, onions etc). Quick way of doing them.

    We make these quite a lot but I'm rubbish at turning them over to do the other side.
