Chicken and pasta?

Tonight we have some chicken left over- needs using up. Thought I would make a pasta bake type thing with it. What sauce can I put in it and how would I make it- any suggestions?

    I did a similar thing for dh earlier in the week, good oldrubber chicken :)

    Chopped and browned an onion in butter, added flour to make a rue, added milk slowlyto make a white sauce. To this I added chopped mushies, a sprinkling of dried mixed herbs, some chopped spring onions and some black pepper. Then mixed in the reheated chicken and poured over cooked pasta. Gratedabit of cheese on top and sprinkled some breadcrumbs on too. Whacked under grill to brown off and served - DELISH.
    WW Start Weight 18/04/12 = 19st 11lbs
    Weight today = 17st 6.5lbs
    Loss to date 32.5lbs!!!

    2 tbsp butter
    2tbsp plain flour
    1 cup milk
    salt and pepper

    Melt butter in pan. Stir in flour and cook until frothy. Gradually add milk, stirring between additions to remove lumps. Stirover a medium heat until sauce thickens and boils. Cook for a further 2 mins. Season with salt and peeper to taste.

    Makes 1 cup. I double the quantities and use millk made from the dried skim milk powder.

    Can be adapted to make any of thefollowing;bechamel sauce, cheese sauce, curry sauce, egg sauce, onion sauce, parsley sauce or tomato sauce. If you needany of the varitaions let me know and I'll post em.

    I normally do a chicken/pasta bake type thingy in a tomato sauce and add a bit of chilli to liven it up a bit. Onion, garlic, chilli, mushrooms, sweetcorn & the chicken, plus tin of toms, into the pasta, cheese on top (sometimes breadcrumbs too) & under the grill.

    either white sauce, cream of mushroom soup (trust me, it works :D) or a good old basic tomato based sauce.

    I'd do a cream pasta sauce - fry onion, garlic then add chicken, diced pepper and fry then add generous amt of cream and a stock cube, black pepper and salt to taste. Boil the pasta and mix together when cooked. Then put in casserole dish and top with grated cheese, and a sprinkle of paprika. And then bake it until cheese melts.

    Much as a cream sauce sounds nice I dont want to go to supermarket tonight and we have no cream! At least with a roux I have everything in stock!

    My sons favourite meal is pasta, peas, sweetcorn, chicken (or bacon), crack an egg into it and sometimes i add a splash of single or double cream!!!! Very simple and quick to make, a like it with onion and cheese, but he likes it plain!!!!
