Hi PP - thanks for the thread :)

We had a couple of changes last week and my BD takeaway early so none next week.

Breakfasts are cornflakes, toast or porridge followed by banana smoothie. Lunches are Minestrone Soup for 2-3 days midweek, then cheese sandwiches/scones or something on toast - Dd and i follow with an apple, DH also takes an apple, banana, yoghurt and item of home baking to work. Snacks are apples, bananas, satsumas, dried fruit, celery or carrot sticks, and am making some iced buns and shortbread. Puds can be any of the above, or yoghurt, or vanilla/choc pud, or semolina, or i have discovered this afternoon that DD likes hot choc as afters too  Drinks are tea/coffee, milk, orange juice and water.

Saturday (L) At parents' house (D) A freezer raid so onion rings, sausages and a few samosas with potato wedges, carrot and celery sticks, and a dip of some sort - probs will do a honey mustard mayo.

Sunday (D) Mince (from freezer), yorkies, veg and mash. Then baked apple and rhubarb with marzipan. (T) Pancakes with cheese, followed by shortbread or iced bun - poss even one of each ;)

Monday: Spaghetti with anchovy tomato sauce (making enough sauce to freeze) and a salad
Tuesday: Dahl (from freezer) with rice, salad, pickle and chutney
Wednesday: Gnocchi with tomato sauce and broccoli or spinach
Thursday: Fish Pie (from freezer) with spinach and baked beans
Friday: Chinese onion gravy with peanut and pea studded rice and spring rolls
Love and compassion to all x

I never really bake - certainly never made any biscuits before, and I just made the easiest biscuits in the world ever! lol.

Quite simply :- 1 cup unsalted peanut butter, 1 cup sugar, 2 egg whites ,

mix it all together, form into biscuit shapes and bung it all in the oven for 10-15 mins gas mark 4. This has made about 20 biscuits. They are quite sweet ( still yummy tho!) I'll probably use a bit less sugar next time.

Done it now, in consultation with the family, whilst watching tv :D

Monday - HM Potato cakes, scrambled eggs, beans & bacon

Tuesday - Sausage pasta with lots of hidden veg in followed by pancakes & fruit/ice cream for pud (there's too many of us to have them for the main meal, I'd never be away from the cooker :p )

Wednesday - Chicken sweet & sour with peppers, onions & pineapple & noodles

Thursday - Spaghetti bolognese with hidden veg AGAIN ;)

Friday - Potato, courgette, pepper & onion bake with brocolli

Saturday - Meatballs & spaghetti with salad & garlic bread

Sunday - Chicken casserole, mashed potatoes with leek, carrots, brocolli & sweetcorn

Breakfasts are cereal, toast, porridge, yoghurts, fruit & pancakes.

Lunches are soup, sandwiches, leftovers & eggs/beans/cheese on toast.

Snacks are yoghurts, fruit, veggie sticks, cheese & crackers, crisps (my usual mean rule is one pack a day each :rotfl: ) and I always bake some twinks, fairy cakes, a victoria sandwich & I'm having a go at choc chip cookies this week too.

Everything is homemade apart from the garlic bread which is on offer in Netto at the moment ;)

Happy cooking everyone & have a good week!
