hi counting_pennies
last time we had vegans over for dinner i did baked apples with non-dairy ice cream and they went down a treat.
i used eating apples, as they were what we had in, you may prefer cooking apples if you like them sweeter (they'll take longer to cook):
core apples
stuff with mince meat (and some sugar if using cookers)
pour some rum/brandy/similar over the top
stick in the over for about 20-30 mins (that's a rough guess) until they're soft
we get swedish glace from tesco's for dairy free ice-cream as it's really yummy and not nearly as expensive as other alternatives. if you prefer you could use alpro cream, it would probably be quite a bit cheaper than a whole tub of ice-cream (depending on how many of you there are!)
yummy, quite fancy this myself now! will have to wait until i've got my mince pie stocks of mincemeat in...
other non-dairy puddings i've enjoyed:
crumble made with veg spread, again w. swedish glace or alpro

I saw an amazing looking mulled wine jelly, served in wine glasses, in a magazine the other day. It did have an optional cream layer but could easily be left out or replaced. Anyway.... grown up (boozy) jellies are nice0

You can do pretty much any egg-free cake but use soya margerine instead of butter...0

I made vegan gulab jamun for ds's birthday - instead of the milk powder I used ground almonds with a little flour and soy milk, deep fried the balls gently in sunflower oil and then dunked them in a sugar syrup flavoured with cardamom and saffron - they were a big hit and can be done in advance. They would be nice served with swedish glace.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

I have a neighbour with lactose intolerance, who comes over for dinner regularly. Some of the desserts I have made for her:
- baked banana with rum, brown sugar and toasted shredded coconut
- pears in red wine (cook slowly in wine & sugar, add piece cinnamon stick and lemon rind)
- did a mulled wine jelly once for christmas as mentioned above. Instead of cream, added a dollop of advocaat, this made it even more alcoholic, but advocaat is dairy-free and looks just like custard.....
- dairy-free chololate sponge, drizzled with rum syrup (like baba-au-rhum)
- 'danish cherries' - heat cherries (fresh or tinned in juice), bind liquid with a little corn starch, add grated lemon zest and/or juice for taste, and slivered almonds. Can be served any temperature, nice in a wine glass. If using fresh or frozen cherries, you will need to add some sugar.
- apfel strudel made with filo pastry
This might give you some ideas. Let me know if you need more detail on any of these!"Remember that many of the things you have now you could once only dream of" - Epicurus0 -

Hello everyone... This might not be the best place for this but having looked through other threads there seems to be a fair few savvy chefs posting here...
I have been roped in to making desert for our christmas meal... it has to be suitable for a vege and a lactose free diet, and be capable of travelling an hour in the car before serving and be yummy.... Oh and of course cheap.
I had a thought of spiced pears, but can't see how this would travel.
Anyone have any ideas for me pleeeeeeeeeeeease? (Other than just refusing)
Thanks in anticipation.Bump due 22nd September0 -
