Cooking Beetroot leaves

Having pulled all my beetroot yesterday for storage, I now have a large supply of beetroot leaves. I've read that they can be cooked like spinach. Does anybody do this, and if so, do they have a strong beetroot flavour when cooked? I'd rather cook them than compost them if the flavour is pleasant.

  • you can eat the little young ones raw in salad and yes, cook asd spinach - they taste green and leafy. Nb when you cook beetroot try adding the zest and juice of an orange it makes a lovely rich accompaniement to red meat

    I grow the white beetroot from realseeds to eat the leaves, I cook them like spinach. Taste a bit like that as well.

    Barneysmum - I cooked a batch of the leaves for lunch today. They were absolutely delicious, very tender, and just like spinach. They didn't have any of the "earthy" beetroot taste which you get from the root. I still have a huge bucketful of them to use up, so will be using in stir fries, minestrone, and tomorrow will be putting some in a cheese and "spinach" flan. Am very annoyed with myself to think that in previous years I've just been twisting them off the roots and putting this valuable resource on the compost heap!

    Might try this, I had read that you could eat them. Hundreds of years ago they grew them for the leaves and threw the root away.

    Something to put on to do list for next year. :D

  • Think the red ones of rainbow chard basically. Can be used in all the same ways as any spinach or leaf beet.

    Wilt briefly and saute in olive oil with garlic and sesame seeds is an impressive side dish which looks and tastes far more impressive than any effort involved for example. ;)
