whatchya picklin?

I pickled some beetroot today :) Looked like something out of psycho standing in the kitchen with my red hands brandishing a sharp knife...
Don't know what to pickle next. Anyone done pickled eggs? Only ever had one on a drunken pub crawl as one of the 'dares' so I can't say whether I even like them!
I even used my white vinegar which was meant for the laundry - oops!
I may try carrots or nectarines next. Yes you can pickle fruit! :rolleyes:

    I've just done beetroot as well, I do eggs every year as my eldest loves them and am going to attempt some onions this year too as XDH always used to make those :D
    Organised people are just too lazy to look for things

    Moggins - can you tell me how you pickle eggs - my DH just loves them!!! :T

  • I know this is slightly off topic, but we had a jar of cheapie pickled onions(25p) and he added some dried chillis to it a few weeks back and they are lovely :D

    This year I will be mostly pickling onions....we did chilli one's last year - they blew your head off, but were lush! :D

    Ooh, I made loads of this about 3 weeks ago!

    4 lbs Diced green tomatoes
    1 lb Diced apples (I like granny smiths for this recipe)
    8 oz Raisins
    1 1/4 lb Diced onion
    2 tsp Salt
    1 lb Sugar
    1 Pint Vinegar
    2 Chillis. Chopped
    1 Inch piece of ginger, grated

    Put all the above ingredients into a large heavy pan, bring to boil. Stir well. Simmer until thickened (take just over an hour). Pour into warm sterilised jars. This quantity makes 4 - 5 medium jars.

    how do I pickle beetroot please!!! Bought some uncooked, in the hope that I might pickle it before it goes off!!!! I lurve pickled foods!!!!

    My gran used to make this with the rag ends of garden produce...

    Year End Garden Pickle

    1 pound courgettes, cut into 1/4 inch slices
    1 pound green beans, ends removed
    1/2 pound carrots, cut into 1/4 inch slices
    1/2 pound pickling onions, peeled and cut into 1/2 inch slices
    2 large sweet green peppers, cut into 1/2 inch strips
    1 large sweet red pepper, cut into 1/2 inch strips
    1 cup brown sugar
    1 cup white sugar
    2 tablespoons dry mustard
    2 tablespoons mustard seed
    1 1/2 tablespoon salt
    1 teaspoon cinnamon
    1 teaspoon ginger
    3 cups cider vinegar



    Mix vegetables, set aside. Combine sugars, spices and vinegar in a large saucepan. Bring mixture to a boil; add vegetables. Return to a boil. Reduce heat and simmer 20 minutes. Pack hot pickles and liquid into hot jars, leaving 1/4 inch headspace.

    Do you add fresh or dried? I have loads of dried chillis and I love my pickled onions to blow your head off :D

    I've used both in the past, last years were fresh ones, the sort that make your fingers sting just from deseeding!
