I seem to spend all my time in the garden digging up dandelions from my veggie patch and the patio. Question - dandelion leaves are edible, aren't they?
I don't use any pesticides or weedkiller in the garden so there shouldn't be any chemicals lurking. We live by the sea, garden is walled, so the worst I imagine, will be that the leaves would taste salty. My rocket has run to seed now, so I'd appreciate some free fresh leaves. I also have lots of mint which is rampaging over the garden - what's the best way to dry for teas or make into mint sauce etc?

yes you can eat dandelion leaves as salad or cook them.Also you can dry and then roast the roots,grind them and use as coffee.
For mint just dry the leaves to use later(not after rain though or they go mouldy) or cut and use.
You might be able to save your rocket seed and use it next year.0 -
You can also eat the "hearts" - unopened flower buds in a salad and also, courtesy of Food for Free by Richard Mabey...
Cooked Dandelion Root - Japanese Style
1 cup scrubbed dandelion roots cut in thin rings
1 tbsp vegetable oil
Water
Salt
Soy sauce
Gently saute the dandelion in the oil and then add a little water and salt; cover and simmer until the roots are soft and most of the moisture has gone. For mint sauce you just chop fresh mint up finely and then stir it into some vinegar. Add sugar if you like it sweeter. Much tastier than shop bought stuff:).0

Nastursiums are really nice in a sald. I ahve to nick them from my Mum's garden as I don't have any!!!0

Somebody should just mention that dandelions are call "pee the bed" where I come from & yes they really do work. The French have "pis en lits" which I think means Europe is united on this one. Oops0
