Need a recipe for vanilla pannacotta

I recently tried vanilla pannacotta on holiday, it was yummy, but I can't find a recipe for it. I think it was made with real vanilla cos it had black bits in! or maybe flies? Any help appreciated as always.

This looks a bit like it. I think
Ricotta Panna Cotta
Ingredients:
1/2 cup heavy cream
8oz package cream cheese
1/2 cup (6 oz) ricotta cheese
2/3 cup Splenda (sugar)
1 tsp vanilla extract (I use Atkins vanilla syrup)
**1 tsp almond extract or 2 oz. Amaretto liquor (**optional)
2 eggs
Preheat oven at 300 degrees
1. In a mixing bowl, mix the cream cheese and splenda until smooth.
2. Add the ricotta cheese, cream, vanilla and the optional almond extract or Amaretto liquor.
3. Scrape the bowl with a spatula and add the eggs, mixing until combined.
4. Divide mixture between ramekins or one large bowl.
5. Place bowls into a larger, shallow pan. Fill pan with a couple of inches of warm water.
6. Bake in this water bath, covered with parchment paper, until set or until the dessert's middle does not jiggle when touched. Baking time will vary greatly, depending on how deep or shallow your dish is. (for 4 ramekins I baked about 45 minutes)
7. Here's another one to try:
Vanilla Panacotta
2 cups of cream
1/3 of a cup of icing sugar
2 sheets of gelatine leaf or 4 teaspoons of gelatine powder
1 vanilla bean - split and scraped
1 teaspoon of Grand Marnier - optional
Method:
Place cream, sugar and vanilla in a saucepan and bring to the boil.
Reduce heat and allow to simmer, reducing by 1/3 in volume, make sure you stir it occasionally to prevent burning.
Soak the gelatine in cold water until soft, then drain.
Take the cream mixture off the heat, allow it to cool slightly and then add
softened gelatine and stir.
Pour mixture into the required container and refrigerate for 3 to 4 hours before
serving.
Serving Suggestion: Serve with fresh berries and double cream.
The addition of cardamom seeds, a pinch of all spice and a cinnamon stick when heating the cream makes a lovely variation to this recipe.
(If you're addicted to chocolate, add 100 grams of quality chocolate!)0 -

Splenda is a low cal sugar thing.
