Back again!
Made far too much rice tonight so have lots left over.
Does anyone have any quick ideas on how to use it maybe for a lunch dish to take to work?
Thanks

Rice salad ... add some tuna/left over cooked meat/ peas/other veggies ... drizzle with a little oil/vinegar or oil/lemon juice dressing and away you go :D

Alternatively, save it for tomorrow night and make it into a meal as a stir fry :)

There's a very nice sausage and rice salad recipe in our Old Style Recipe Collection. You can find this in our "Collections" sticky at the top of the board, or just follow the clue in my signature below :)

Alternatively, instead of wading through the index ... try the direct link:

Spooky - i cooked too much rice last night so made my partner a rice lunch box!

I raided the fridge and he ended up with chopped luncheon meat and celery mixed in with the rice and seasoned with mixed herbs, salt, pepper and a small amount of ginger. He loved it :D

You can pretty much chuck anything in with it as long as you like it ;)

freeze it in small portions !
then you can microwave it as and when needed.

I always cook double and freeze 1/2.

You can use cold rice to make egg fried rice, just chuck it in a frying pan with a bit of oil, then whisk a couple of eggs and add them, stir well until the egg is cooked and combined and tada - egg fried rice! I also make this into a main meal by adding onion, peas, chicken, whatever's hanging aound really.

I would warm the rice up first in the microwave (3mins) - you wouldn't want to get food poisoning from it not being piping hot.
