Just wondered if any of the many foodies out there could recommend a recipe using either a tin of salmon, tuna, sardines or kippers ( bought these in a moment of madness). For example I would love to make a quick and easy salmon fish pie for tea this evening, but have no recipe. I have 3 tins of salmon in my cupboard at the moment and they could be there for a long time along with the kippers as I am not good at using them - so please help!

How about making fishcakes?
Mash some potatoes, mix in flaked fish and seasonings, make into round fishcake shapes and dip into egg and flour and fry"An Ye Harm None, Do What Ye Will"

Salmon Pie (feeds 4 or make smaller & freeze)
2 large tins salmon, drained
Large handful of peas (defrosted if frozen)
Seasoning to taste
Optional : handful of defrosted/tinned well washed prawns
For the sauce
Either
White or parsley sauce made using equal amounts of plain flour, butter/marg & milk, beaten in a saucepan over low heat until pouring consistancy (add white wine for a decadent touch) add parsley/hebs if desired
OR
2 large handfuls of tinned/defrosted sweetcorn whizzed up in blender to form puree & thinned with stock or water to pouring consistancy
Mix salmon/peas & sauce together & put in casserole or deep pie dish/es.
Top with either mashed potato or puff pastry & pop in medium oven for about 30 mins or until pastry is golden.
Salmon or Tuna Plait
Mix tinned fish with finely chopped spring onions, finely chopped hard boiled eggs & herbs.
Roll out a block off puff pastry (sorry, I am talking ready made here, can't make puff pastry for love or money) to rectangle, place on greased baking tray & put fish mix along the length of the middle third. You should have roughly equale amounts of pastry left each side of the fish, enough to fold over & cover the fish.
Use a sharp knife & cut the remaing 2 thirds (each side of the fish mix) into downward pointing strips about 2 cm apart, so that they are still attached to the pastry at the fish side. Should kind of resemble a lot of arrows. Fold the cut pastry strips alternating from each side so that they meet & overlap each other in the middle on top of the fish (this is where the Plait bit comes in, looks just like it!) brush with beaten egg & cook on medium heat until pastry has puffed. Can be served hot or cold.

Tuna is lovely stirred into cooked pasta with some grated cheese and just enough cream to make it moist. add a sliced red pepper and some spring onions for colour. very quick and even my fussy younger DD eats it
can do the same with salmon but it makes lovely fishcakes if you have the time. Delia has a good recipe
Tinned sardines - spread a bit of pesto on toast add the sardines then top with cheese and brown under the grillIt doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!0 -

I always keep a supply of those condensed soups in the larder along with a supply of pasta and tinned tuna then I can always make Tuna Pasta Bake. Just tip tuna into a bowl and mix with undiluted condensed soup in either cream of mushroom/cream of chicken flavour. Put into a casserole with some cooked pasta and pop into oven until heated thru. You could pop some grated cheese on the top as well and grill until cheese is golden brown and bubbling. Salmon can be substituted for tuna. These soups make a great instant sauce and one tin mixed with salmon and topped with mash potato makes a very quick and easy salmon pie - not particularily a foodie recipe thoOur days are happier when we give people a bit of our heart rather than a piece of our mind.

Hi there, first time postee here. Just wanted to share a lovely combination of flavours.
Salmon and Pesto Pasta Bake (Makes 6 Portions) (56p per portion)
(67p) 1 Tin Salmon
(13p) 1 onion (Diced)
(3p) 1 clove garlic
(4p) ½ tsp dried dill
(£1.54) 1 jar green pesto
(65p) 500g Pasta.
(30p) Cheese (grated) to top it.
Cook the pasta according instructions
Fry the onions and garlic in some of the oil from the pesto until they go transparent.
Flake in the Salmon and break it up with the onions and garlic.
Add the dill and stir.
Add the cooked pasta and the jar of pesto and mix well.
Put in an ovenproof dish/lasagne dish and top with grated cheese.
Bake in the oven for 20 mins at 200C or until the cheese bubbles and starts to crisp
Lovely served with a bit of salad!
I could make it better myself at home. All I need is a small aubergine...

to everyone who responded, there are some lovely ideas here. Used the Salmon pie recipe last night and it turned out quite well - unfortunately my white sauce needs a bit of practice as it was a little lumpy! -
