Pork Burgers with Salad
500g Minced Pork
2 tbsp Worcestershire Sauce
4 rashers streaky bacon
Lettuce and tomatoes
Mayonnaise
Burger Buns
Salt and Pepper
Season the meat and add worcestershire sauce, mix well and shape into 4 burger shapes. Grill for about 8 minutes on each side. Add bacon for last 8 minutes.
Put tomato and lettuce on burger buns, add pork burger, a dollop of mayonnaise and bacon on top.Official DFW Nerd Club - Member No. 133

Salmon and Dill Fishcakes
700g Potatoes cut into chunks
2 tbsp Milk
Tinned Salmon (drained)
Knob of Butter
Onion finely chopped
2 Tbsp creamed horseradish
1 Tbsp chopped fresh dill
1 Egg
225g Breadcrumbs
Cook the potatoes for about 15 minutes until tender. Drain and mash.
Heat the butter in a pan and cook the onion for 4 minutes, mix into the mashed potatoes with 2 tbsp of milk, the horseradish and dill. Stir in salmon.
Shape into eight cakes and dip into egg, then breadcrumbs. Heat the oil in a frying pan and lightly fry for 6 minutes, turning half way.Official DFW Nerd Club - Member No. 133

Bacon and Cheese Fritatta with Tomato Salsa
8 rashers of back bacon
spring onions chopped
8 eggs
85g cheddar cheese cut into chunks
2 tbsp milk
knob of butter
4 tomatoes
red chilli
bunch fresh coriander
juice of 1 lime
red onion chopped
Cut the bacon into small pieces and fry for 5 minutes. Add spring onions and cook for further 5 minutes.
Beat the eggs and milk and season. Mix in nearly all the bacon with the spring onions and cheese.
Melt the butter in a frying pan and add mixture. Cook gently for 6-8 minutes until lightly set. Sprinkle left over bacon on top and finish under grill to brown.
Chop the chilli, onion, coriander and tomatoes into small pieces, add a squeeze of lime juice.
Serve the frittata with the salsa and crusty bread.Official DFW Nerd Club - Member No. 133

Chilli Bean Tortillas
500g mince beef
onion chopped
1 tsp chilli powder
1 tsp cumin
tin chopped tomatoes
200g can drained kidney beans
8 tortillas
lettuce shredded
grated cheddar, soured cream and lemon to serve.
Brown mince and drain fat, add onion and cook for 8 minutes. Add chilli powder and cumin and cook through for a minute. Add tomatoes and beans and bring to the boil.
Reduce heat and cover and simmer for 30 minutes.
Warm the tortillas in the microwave.

Chicken with Cannellini Beans
2tbsp olive oil
4 chicken breasts
1/2 tsp paprika
onion chopped
100g bacon chopped
tin tomatoes
can cannellini beans
150ml chicken stock
lemon juice
2 tbsp fresh parsley
Heat oil in large frying pan. Season the chicken and sprinkle with paprika. Fry for 8 minutes and turn for a further 6 minutes until cooked. remove and keep warm.
Fry onion and bacon for 5 minutes until bacon is crispy. Add the tomatoes, beans and chicken stock.
Add chicken and bring to the boil and simmer for 2-3 minutes. Season and add a squeeze of lemon juice. Sprinkle over the parsley before serving.Official DFW Nerd Club - Member No. 133

Lamb Hotpot
Ok I have to say being a lancashire lass this is not an authentic hotpot! But it does taste lovely
8 Lamb Chops
4 Potatoes
4 Carrots
3 Onions
Sprig fresh rosemary
600 ml Chicken Stock
Oil for frying.
Heat oil in frying pan season the lamb chops before browning.
Add a layer of potatoes to a casserole dish, followed by a layer of carrots, then onions. Next add the lamb chops and rosemary then a layer of onions, carrots and finish with the potatoes. Add the chicken stock, cover and cook in oven gas mark 4 for 2-3 hours. About 30 minutes before serving add a small knob of butter over the potatoes and take the lid of to brown the top.Official DFW Nerd Club - Member No. 133

Jacket Potatoes with Leeks and Mackeral
4 Baking Potatoes
2 Leeks sliced
2 tbsp creamed horseradish
4 smoked mackeral
lemon juice
50g butter
Bake the potatoes in oven.
Heat butter in pan and cook the leeks for about 5 minutes, add the horseradish, flaked fish and lemon juice. Season with pepper.
Halve the potatoes and mash the top with a fork, spread mixture on top and serve.Official DFW Nerd Club - Member No. 133

Tagliatelle with Smoked Salmon
250g mushrooms
taglietelle pasta
125g smoked salmon trimmings
3tbsp fresh parsley
1 tbsp oil
200ml creme fraiche
lemon juice from 1/2 lemon
heat the oil in a pan and fry the mushrooms until brown. Cook the taglietelle in a large pan.
Stir the salmon, parlsey, creme fraiche iand lemon juice into the mushrooms and season.
