    Hi Nicki,

There's an earlier thread with some links that may help so I'll add your post to it to keep all the recipes together.

    This thread may help too:

  • I got this today about Microwave Cakes...

    5 MINUTE CHOCOLATE MUG CAKE

    4 tablespoons flour
    4 tablespoons sugar
    2 tablespoons cocoa
    1 egg
    3 tablespoons milk
    3 tablespoons oil
    3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
    1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous).

And why is this the most dangerous cake recipe in the world?

Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Sounds interesting but I think I will try it in a small Pyrex bowl rather than a mug. What oil did you use - virgin olive or vegetable oil?

My microwave is only 700watts so I left it in a bit longer but it still worked...it was really nice (surprisingly)

  • ewww 4 tablespoonfuls of sugar in a mugfull of sponge !!!
i'd rather make the 4oz sugar/butter/flour + 2 eggs, with either jam or fruit under it (cooked for 6 mins)and have a huge bowlfull that feeds 5 of us :)

  • I've made this microwave sponge pudding before: http://www.bbcgoodfood.com/recipes/5598/fastestever-lemon-pudding and it turned out far better than I expected. It's a regular now when I have a pudding urge and just can't wait :D
  • This is the eggless recipe that i use. I have one of those silicone cake tins that you can use in the microwave so it comes out like a 'real' cake!

    2 & 2/3 cup cake flour,
    1 and 1/3 cup sugar,
    2/3 cup of oil,
    2 tsp bicarb of soda,
    2 level tsp baking powder,
    2 cups cold water,
1 tsp vanilla or almond extract
    2 tbl lemon juice

Split the mixture in 2 and Microwave for 6 mins. When both are cool, add jam and cream and sandwich together!

but there's lots of cocoa in this which is very bitter...? and if you're adding jam then what's the difference.

two mug cakes easily serve 6 people!
