Sticky toffee apple crumble

I saw a recipe for this yesterday, think it was in the tv guide for daily Mail. We were coming back from hols and unfortunately paper was left at accomodation. Does anyone have details for this or any other good ideas for a halloween/bonfire party (recipees or games etc) we are having next weekend.

    TOFFEE APPLE CRUMBLE

    For the Toffee
    45g unsalted butter or margarine
    55g dark brown muscavado sugar
    6 tablespoons golden syrup
    250 mls (½ pint) double cream or soya cream for a parev option
    2-3 large cooking apples Skinned, de-cored and finely sliced

    For the Crumble

    75g wholemeal flour
    75g plain flour
    55g rolled oats
    75g butter or margarine
    75g soft brown sugar
    2 tsp cinnamon

    To Make the Toffee

    1) Pre-heat the oven to 1800C (3500/gas mark 4).
    2) Make the toffee sauce by heating the butter or margarine, soft brown sugar and golden syrup in a small saucepan.
    3) Melt completely and boil for 3 minutes until it is golden brown.
    4) Remove from the heat and stir in the cream, mixing well.

    To Make the Crumble
    1) Put all the crumble ingredients into a food processor and pulse until they resemble breadcrumbs.

    To Prepare the Apples
    1) Peel, de-core and thinly slice the apples.
    2) Cover the bottom of a large ovenproof dish with the prepared apples.

    To Finish the Toffee Apple Crumble
    1) Pour the toffee sauce over the sliced apples, coating thoroughly.
    2) Cover with the crumble mixture.
    3) Bake for 30 minutes.

    When I saw the title of the thread,I thought I'm sure I've just seen a recipe for that.Luckily w get the mail on a Sat- I like the tv guide and it does some good recipes.Here goes- I'll alter the text a bit so as not to offend copyright.

    Crumble Top
    125g butter
    175g plain flour
    half teasp cinnamon
    25g rolled oats
    100g demerara sugar

    Base
    1.5kg bramley apples
    25g butter
    8-10 tbsp bought toffee sauce (Dulce de leche) I think M&S do one of these too.
    2 tbsp water

    Method
    Pre-heat oven 180deg/MK 6 gas
    Peel and core apples,chop into chunks.Cook in a pan withthe butter & water.Cover and cook on low till softening-10 mins or so.
    Put into dish(either 8 small individual or 1 large) and put the toffee sauce on top.
    Make the top by rubbing in flour,butter and cinnamon,then add the oats.Put on top of apple mix,and top with the sugar.
    Place on a baking tray,cook around 40-50 mins,till golden,and juices bubble round side.

    It says you can add half a teaspoon of nutmeg,mixed spice or cinnamon to your custard if using .

  • I have often made a toffee apple crumble, I just add brown sugar and a knob of butter to the apples and cook them in the oven till the apples are soft, I then stir in a couple of tablespoons of cream and top with a crumble mix made with a higher than normal proportion of butter - using about 4oz butter to 6oz flour. I sometimes add some oats or chopped nuts to the crumble topping. finish cooking as normal.

    I have just tasted food heaven.

    I made Sue20bracknell's Sticky toffee apple crumble and it is amazing.

    However, next time I think I will only use 150mls of cream, as the sauce was thin so I had to reduce it down a bit, and even then by the time the apples have stewed in it and released all their juice, it boiled over and made a sugary mess everywhere. Worth it though :)
