veg stock is even easier than chicken stock. Just bung onion, carrot, garlic and whatever other veg you have in to a pan, cover with water, bring to the boil and then simmer for an hour or so. Add some fresh herbs if you have them.
Try to avoid very strong flavoured veg such as broccoli or the result will be more broccoli stock than generic vegetable stock
when I chop veg, I save the ends and sometimes the peelings, put in a bag in the freezer and then when I have a couple of bags, I make stock.0 -

I use Knorr vegetable stock cubes which are working out expensive, is there a way I can make my own vegetable stock?

Ive just read the thread about Chicken stock which as a vegetarian Im not going to make, but it made me wonder how you would go about making a vegetable stock ? Anyone got a recipe ? and how would you keep it, does it have to made as needed or can it be frozen ?

Vegetable stock is made by simmering onions and other chopped veg
I don't find it particularily flavourful, though, so if I'm making veg soup, I just use water, and add some Marigold bouillon granules
I'll add this to the existing veg stock thread to keep ideas together.

Afraid I agree with Penny on the veg stock thing, I have tried a few times to make my own veg stock and it just doesn't taste of very much at all
I am a complete fan of Marigold powders too, I usually have the vegan reduced salt one if I can get it and a little goes a long way0 -
sorry Ive not been online for a few days, thanks for the advice. I have been using vegetable oxo cubes but I will give the marigold ones a try.

I don't think anything beats Marigold when it comes to vegetable stock,it's been a part of my store cupboard for as long as I can remember.
I always think if your'e going to make your own stock the three most important veg to use are onion,carrot and celery(especially the leaves) along with some mixed herbs and black pepper.Also I always saute my veg in a little butter to soften them before adding the water,I find this always improves the flavour no end.
I never do but if you use turnip or swede only put the tiniest amount in,it overpowers and I never use green pepper as it gives a bitter tinge.
Mushrooms and brocolli are other no nos,for my taste anyway.It's just a matter of expermenting and seeing how you prefer it to taste.0 -
I was just wondering whether people here bought or made their vegetable stock. I would like some to flavour soya mince but I am concernred about the salt levels. I found Kallo's Low Salt version online but it wasn't in store and, besides, it was 99 p or so for 6 cubes which strikes me as a bit excessive. I don't often buy fresh vegetables, haven't grown any (but I am going to this year) so I'm not sure if it's worth actually buying the ingredients to make it myself. That said I have lots of frozen vegetables: broccoli, mixed vegetables, carrots, peas...
Also, I was reading some recipes and one said to keep your potato peelings. Does anyone do this? I go through a lot of potatoes and I wouldn't mind using the peels for something.
Edit: Also, Marigold Bouillion (sp?) powder - can I use that as stock or is it something completely different?0 -
i buy sainsburys "basic" veg stock. i cant remember how much it is off the top of my head
but its very good. i also save the water that i have been boiling/steaming veg which makes a very good stock for soup
