spelt bread in the breadmaker

Options
Has anyone had any success with this.
I don't digest normal wheat very well and Spelt flour works well with me.

I tried this recipe
3 cups flour
1 cup water
tsp salt
tsp honey
tbs oil
sachet yeast

Set as 1.5 lb loaf and it came out very heavy, dense and not meeting the edge of the tin!!

I'd appreciate any ideas.

I think spelt bread needs much longer to rise than wheatflour bread. When I've made it by hand it took a lot longer to rise than normal. I still make this by hand when I have Spelt flour. Seriously delicious bread though.

Maybe set the BM on Dough setting then control the rising time yourself?
My first reply was witty and intellectual but I lost it so you got this one instead :D

    Hi
we use spelt for our breadmaker and have had great results. We use the wholewheat programme and just substetute the wholemeal for spelt. If it says 0.5 wholemeal and 0.5 white just use all spelt also. We have had no problems with this. the best results though are with spelt dough, same rules apply, but the buns are much better I think. We use spelt because we eat a blood type diet and we are O group, therfore no wheat. Do you know anywhere that does spelt wholesale or in bulk as Holland and Barrett and Tesco are very expensive I think.

I find Tesco cheaper than the organic shops or health food shops.
I just don't buy a lot of it as I'm used to not eating bread.
I was buying spelt loafs from an organic bakery ( yum!) and they were around £2 a loaf - so breadmaker option seems cheaper.
I'l try the wholemeal setting and see how that goes.
And, if it's ok with you, I'll PM you for recipes.

I've never tried it in a BM but I bake most of my bread with spelt.
Spelt needs about half of the kneading that wheat does otherwise it gets overworked and won't rise so much.
Not sure how you'd get around this using a BM though...

  • Hi 1jim

We use spelt flour at my wee ones school to make bread 5 times a week for lunch. Just use your normal wholemeal recipe and you'll be fine. Spelt is just a different type of wheat - actually one that kids with wheat intolerences find that its OK to eat which is why we use it.

Erm - don't know how it keeps after baking cos the kids always polish off the bread on the day its made

  • I make 50% spelt / 50% granary (both Dove's Organic) in my BM and it turns out fine.
If you have a talent, use it in every which way possible. Don't hoard it. Don't dole it out like a miser. Spend it lavishly like a millionaire intent on going broke.
