I adore Salad and live on it all summer, but what about in the winter?
All the normal salad stuff is expensive. Years ago i had a lovely winter salad somewhere which i think contained white cabbage (cheap enough) and other stuff but i can't remember what.
Does anyone have any ideas of what i can put into a salad out of season, thats cheap?
Thanks

bean sprouts is the first thing that comes to mind. DIRT cheap if you grow your own... a few pennies means loads of sprouts.
Quite a wide variety of stuff can be sprouted... mung beans isnt the only thing...other beans/lentils/even a few seeds I seem to remember. Very healthy.0 -

Winter salads can consist of shredded everything: carrots and cabbage of course, but also celeriac or brussels sprouts. Another good one is coarsely shredded chicory (great with grated apple or tinned pineapple chunks). Sliced or cubed beetroot (the one not in vinegar), combined with some sweetcorn from a tin. Once you go beyond just lettuce, there are lots of possibilities - they can all be mixed and/or combined with beansprouts, nuts, raisins and will be happy with all sorts of dressings. Add a tin of tuna or cubes of ham or salami, or beans/chickpeas if you are a veggie, and it is a meal in its own right."Remember that many of the things you have now you could once only dream of" - Epicurus0 -
Bean sprouts are a winter favourite in my house too. I sprout mung beans and apparently they're packed with nutrients.
I make salads in winter with; carrot, white cabbage, red cabbage, celery, onions, cauliflower, shredded green cabbage, cooked veg like peas and sweetcorn, toasted sunflower seeds, bits of crispy bacon, cheese, raisins, apple, oranges....not all together though.0 -
Some great ideas there thank you all.
I'm a bit of a stick in the mud with salad and never thought of many of those things, some sound delicious.
Going to look into sprouting my own salads.

I've also had some brilliant salads when it's been cold outside where I just had basic salad stuff (whatever leaves where in the fridge) and then put something warm on top of it-mushrooms fried in some garlic butter, poached egg-makes it seem much more filling and cosy!0

As OP all said shredding veg is a good one.
I do a salad with roasted peppers, carrots, parsnips - basically veg left over from Sunday lunchand then the next day add fresh cooked rice or pasta with a french mustard dressing. Very yum!

Hello everyone.
I'm struggling a bit to come up with nice Autumn/Winter side salads to go with my lunches.
The salad needs to go with nicely tinned tuna and salmon, as well as chicken.
In summer it's so easy to do salad leaves, cucumber and tomatoes but I'm stuck for something seasonal (and it needs to be cheap!).0 -
