Rocky Road as a Gift - goes down VERY well!

Hi Guys, let me share my tried and tested (and super easy!) Rocky Road recipe. I made this to take to work for a MacMillan bake sale, it was going for £2 a slice :eek: and when it was gone people were asking me to make more!!

15oz milk chocolate (I use Somerfield own at 30p a bar, it's about 6 bars)
4oz unsalted butter
4oz mini marshmallows (Somerfield sell a large bag of pink & white mini marshmallows for 90p, you will need about half)
3oz digestive biscuits, broken into small pieces
3oz glace cherries, chopped
Mix the marshmallows, broken biscuits and chopped cherries in a bowl (very important you do this as you don't have time to once the butter's in the melted chocolate!)
Melt the chocolate and once it's melted, the butter in a bowl over a simmering pan of hot water.
Mix the marshmallows, biscuits and cherries into the chocolate mixture and sir well. Transfer into a square pyrex or baking tin, about 2 inch thick is best. Press down well with a spatula.
Transfer to the fridge until the mixture is set and then cut into bite size chunks (an inch square is more than enough as with the thickness these make mini bars.)
For the bake sale I simply served on serviettes but as a gift these would go nicely into a small cake box, or into a cellophane bag. They are VERY moreish! At five or six chunks a bag you could very easily make four if not five little gifts. Lovely with hot chocolate!

I made this last Christmas using amaretti biscuits (£1.99 in MrM) instead of digestives and chopped brazil nuts (from Nigella's Christmas book) and as said before they went down really well.
Have the stuff in ready to do again this year :j0 -

You can adapt the recipe to include anything really - if you have any coco pops or rice crispies they bulk it out brilliantly (just use 1 less digestive and add 2 or 3 handfuls) and they give a lovely crunch. Or you can add flaked almonds (I didn't as I think the almond flavour can be a little bit overpowering and almonds are expensive)

how long would it keep once made?
I think i would add sultanas and maybe a hint of vanilla to my one0 -
