i seem to have cooked enough basmati rice to feed a chinese village for a week!
had chicken fried rice for tea and still have tonnes left, what can i do with it?
will it feeze or have you got any good recipes?

You have to be so careful with rice Vix.
It's really easy to get food poisoning from it - can't you tell I had to do a food hygiene course recently? :rotfl: Anyway, we were told that the spores from the bacteria found in rice can survive even high cooking temperatures that would kill other bacteria.
I often tend to cook too much rice, but would throw away any leftovers. Not very OS I know.Is it better to aim for the stars and hit a tree or aim for a tree and land in its branches :think:Loves being a Wonderbra friend :kisses3:

I always cook rice in huge batches and freeze it. The important bit is too cool it as quick as possible and then freeze - the weather atm is great for this.
I've only made one dodgy batch where I would get watery diarrhoea, and I stupidly did it during a heatwave last summer !!!0 -
You could always add milk and a little sugar to it, heat it up and let it simmer for a while and there you go a rice pudding dessert! yum!0

Why not try a curried rice salad with the leftovers? I often do this and providing you eat it within the next couple of days it should be fine if you keep it in the fridge. I mix cold rice with sultanas, chopped onion, chopped apple and curried mayo (made with hellmann's extra light mayo, a tbs of mango chutney, a squirt of lemon juice, about 1tbs of curry powder, a little bit of salad cream and a little salt and pepper). We all love it and it is nice with cold meat or you can chop cold cooked chicken into it.Jane

I would freeze it in portions to use up in the following:-
1) Stir fry's
2) To add to soups to bulk them out
3) To add to casseroles to bulk them out
4) To make a rice salad
5) To use in HM bread in the bread machine
6) As the starch element in HM Muffins a la Tight Wad Gazette recipe
7) Add it to a custard, mix in some fruit and serve as a dessert.
Try not to panic about the rice poisoning caution! To cool rice quickly, simply run it under cold water.
The bacteria concerns regarding rice are the same as with most foods ie: do not leave standing around for any length of time at room temperature!!!

I know this is not strictly what you are asking, but you might like to know this if you are a dog owner.
When my dog had an upset stomach some time ago the vet recommended a diet of plain rice for a few days. Apparently it's very good for their digestive systems, and helps to counteract the bad effects of an almost exclusively meat diet.
I always make a point of cooking a bit too much now, and Daisy has her little bowl too. She hasn't had an upset stomach since.
