How about coating your steaks with wholegrain/English mustard and then cooking in pan. Cook onions and mushrooms in the pan first until gently softened. Add creme fraiche and a drop of wine and use a whisk to blend it all together. Season and enjoy.
Could be done in another pan so you have a sauce for chicken as well as the steak?

Tomato & garlic sauce is great.
Half pint basic white savoury sauce, 2 heaped tablespoons tomato puree and 2 teaspoons garlic puree (or to taste) - mix together and heat through before pouring over cooked steaks. Alternatively you can pour over your part cooked steaks and continue to cook in the sauce. It's nice to be important, but it's more important to be nice.:kisses3:0 -
I prefer garlic butter myself - steak needs no other flavouring! I chop fresh parsley and fresh garlic and mix them together in a pestle and mortar with butter and a touch of olive oil. Yum. Im salivating now!

We like to marinade the steaks in red wine garlic and worcester sauce and after removing the steaks from the marinade and cooking them, adding the marinade into the pan until it is nice and syrupy.0

Peppercorn sauce, (not sure where i got the recipe from, but its lovely)
Use the pan you have cooked the steak in.
De glaze with some white wine. Add garlic (clove either sliced or crushed, more if you want) and some peppercorns, half a stock cube and a little water.
Simmer and reduce.
Stir in some double cream.
Add any juices from the rested meat, and a knob of butter.
Should take about 5 - 10 mins.
Sorry i dont have exact measurements, i 'bung' in whatever and keep tasting to see how its going!!!0 -
I agree with catowen, pepper sauce with steak is my very favourite.
I do mine exactly as cat does, but use crushed rather than whole peppercorns. Sometimes for a special occasion, I use brandy instead of wine. A creamy pepper sauce works just as well with chicken as it does with steak.
There some more ideas on this thread: sirloin steak
