Ive just been making my Own Arrabiatta, using Tinned Toms, some Spices etc.
Made two Dishes worth, one for Tea today, maybe the other one for 2morrow(lunch or tea) or Freezer
Ive made too much Penne Pasta.
The thing is I have very limited freezer space (will sort that out after christmas)
What should I do
?

have the aeeabiatta for tea tomorrow and the pasta for lunch? Thats what I'd do rather than chucking it! Won't it keep til Thursday?

Things usually keep for around three days.

I have also kept cooked pasta in my fridge for a couple of days and then used it up in a salad. Just add salad cream and whatever you have in like chopped tomatoes, cucumber or sweetcorn and maybe some chopped ham.Our days are happier when we give people a bit of our heart rather than a piece of our mind.

Make sure it is thoroughly drained, spread out on a greased / oiled baking tray, sprinkle with salt, pepper or herbs (optional) and cook in a hot oven for approx 6 mins. Do watch them carefully as they are quick to burn. You will then have a cheap, low fat alternative to crisps. I do this with all left over pasta and also make my own "dorito" crisps by doing the above, but with sheets of lasagne cut into triangles."Dogs come when they are called. Mix pasta with a quick tomato sauce (sauteed onions, can of tomatoes, pinch of salt and herbs), grated cheese on top, put in oven and have 'pasta al forno'!

I'd take it to work in a plastic tub, pour in a drop of boiling water and heat it back up in a microwave with the tubs lid placed loosely over the top (this is to trap some of the steam in the tub to stop the pasta drying out, but dont seal the tub as the excess steam needs to be able to escape to ovoid minor explosions). Then pour over some olive oil, grated parmasan cheese and a few grinds of black pepper.
An italian would not approve and it wont be as good as fresh, but its still pretty nice!
Another alternative is to chop up a small onion and fry it in olive oil for a couple of minutes until soft, then add a courgette or two (sliced) and cook for a few minutes more. Add this to your reheated pasta and serve. It doesn't sound like much, but its actually very very nice!
