Microwave Cooking a new Challange

Hi, how about a new challange? I have just made a sponge in my microwave and apart from being a bit pale (!) it is perfect. I have been thinking that especially in the hot weather and when there are only 1 or 2 people to cook for the micrwave may be quicker, easier & cooler(!) than the cooker.

What dose everyone think??

I was thinking that we could put together a new collection of recipies - Microwave Recipies. I will start you off -

I simplay made a sponge mix, added some fruit to the bowl poured the sponge over and microwaved until cooked. We are going to have it after lunch with custard. I was thinking you could make individual ones if you wanted or one big one. You could use Jam etc as an alternative and make a microwaved 'steam' pudding.

    I tried this the other night but noticed that when it cooled it went hard. The next day it was resembling a door stop. I dont know if it was me doing something wrong

    I know this one well.

    It's a sign of slight overcooking. It will soften up (even if it's like a biscuit when cold) if you warm it up again in the microwave.

    Next time take 10 seconds off your cooking time. If it still goes hard when cold take another ten seconds off the next time you make it... don't forget to make a note of the best cooking time in your recipe book once you've found it :)

    Micro cooking is much underestimated. My 20yr+ micro is the last thing I would loose from my kitchen. Micros are great for knocking time off a conventional recipe and then finishing off in the oven and are brill on hot days when you don't want a furnace in the already hot kitchen.
    I use mine for cooking pasta, rice, vegetables, scrambled egg, sponge puddings, casseroles and winter stews, making soup, making jam, milk puddings. It's also great for any poultry you need for a recipe a la blanc.
    It's a bit of an urban myth that micros can only be used to defrost/reheat and that you have to zap everything quickly. Utalize some of the lower power settings also and you can cook almost anything.

    Yep, I amazed a visiting friend when I cooked a tuna pasta bake entirely in the microwave (pasta, roux, mash etc) each separately and then combined to finish before a quick zap under the grill.

    Years ago I read somewhere that you could substitue a bit of the flour with a bit of custard powder to make micro'd sponge and bit more reaslistic in colour. Can't remember how much to use though, so maybe you'll need to experiment a bit.
    Chocolate sponge is okay though!!

    Is there any good Combination Microwave cookbooks out there? I've seen a few on Amazon..are they all the same, i don't want fancy cooking just basic easy quick recipes :) I still havn't used my microwave yet.. :rolleyes:
