Cheapest Meals Ever

Can anyone suggest the above. Bit of background. I am self employed on a fairly low income. I have a son who is 19 and will still be at college until June 2006 - he has just lost a part time job and company closed. I have been getting Child Benefit and Tax Credits for him but it all stops in March....finito.
I am getting myself in a stew (pardon the pun). I am thinking of ways to cut back and know that food is a good one, especially sticking to a menu. I think in this instance discipline will be the best way, so I think if I could come up with say seven to fourteen cheapish meals (so it does not get too boring) and made of things that I can have in the store cupboard/freezer.
I know you guys are the experts in this area. I have slow cooker, breadmaker and yoghurt maker!!!!
Obviously I still need to eat veggies and fruit and would have to get them weekly.

Can I suggest you buy a pressure cooker, Lidl's have stainless steel ones for £20 and the spare gaskets are the same the standard stainless steel pressure cooker ones. (Car boots are the place for second hand pressure cookers)
Apart from the savings you get from shorter cooking times, having a pressure cooker makes it far easier to cook pulses from scratch. So you don't have to use tinned one but can buy a large bag of Chick Peas/Lentil/Red beans etc from chinese/indian type cash&carry very cheaply and prepare them in 10-15 minutes in the pressure cooker.

Are you anywhere near a Lidl as you can save a lot there.
Home made soup in the slow cooker with home made bread is very cheap - I just soak some dried peas then rinse and put them in the slow cooker pot - add potaoes, carrots, onions etc - anything that you have - plus stock cube or home made stock and DH loves it!
Home made yorkshire puddings filled with veg and gravy is another favourite.
Egg and chips.
Home made pizza.
Quiche made with eggs,cheese,onions milk and whatever you have in it.
Cornish pasties made with tin of corned beef,onions, potaoes and any veg you like.
You may already have thought of most of these.

Don't forget lentils,the fast-food of the pulse world.They need no soaking and cook in about 20 mins.
Lentils and rice is a perfect meal nutritionally speaking.Try Indian dahl style dishes.Lentil soup is delicious too.0 -
Argos have a slow cooker in the sales for £9.99 at the moment. Other than that here is one of my cheap recipes (adjust the quantities for how much you need):
1lb Mince,
1lb potatos,
2 eggs,
3 slices bread made into breadcrumbs,
3 tablespoons sandwich pickle,
1 onion chopped.
Part boil potatos for 8 minutes and slice. Mix the remaining ingredients in a bowl and put in an oven dish. Place the sliced potato on the top and bake in the oven on gas mark 5 for about 1 hour.2008 Comping ChallengeWon so far - £3010 Needed - £230Debt free since Oct 20040 -
Anything with Mince is usually cheap, hang around supermarkets near to closing time and get their reduced to clear things and freeze them. Most meals can be adjusted to budget. We live well on £30 roughly a week including all cleaning stuff and will not compromise on Nescafe, tetley tea bags, decent wash powder, lenor, nice loo rolls and kitchen rolls-all these bought from Makros when on special. My rough meal plan goes something like this weekly:
Roast Chicken/Lamb, roasties, mash, carrots/peas/cabbage, HM yorkies, stuffing and gravy.
Curry or Pie with left over meat. Served with spuds or rice.
Toad In Hole, Spuds and veg.
Egg & HM Chips with bread and butter.
Shepards Pie & veg.
Lamb Stew & Dumplings.
Fish Pie or Fish, spuds & veg
Breakfasts are normally either cereal, toast, eggs, occasional full english, bacon butty etc. Always have apple/orange juice-get a fruit in there with DD and OH.
Lunches for OH & I are always hot this time of year and because of dietry needs they need to be wholesome, so are things like: jacket spuds with cheese/coleslaw/chilli/curry etc. Beans on toast with cheese. Left overs from day before. If I do a chilli or curry-always make enough for about 4 lots of toppings for jackets and freeze them. DD has school dinners or when at home has same as us really.
We dont really do puddings but always have ice-cream, yogurts, fruit etc in. I think for my £30 we eat well. Im always snacking as Im on a high fat/calorie diet and am often scoffing crisps, biscuits etc

I've always found minced beef a great help in keeping food costs down, but still enabling you to have tasty & varied meals. I cook a batch which will then be used in various meals with the necessary additions-chilli con carne, spaghetti bolognese, mince beef & onion pie, shepherd's pie, curry, minced beef & mixed vegetables to name just a few. All of these can be frozen so you can have days when you don't have to bother cooking, just heat the meal thoroughly.The bigger the bargain, the better I feel.
I should mention that there's only one of me, don't confuse me with others of the same name.0 -
Thanks so much for all your suggestions - I will sit down tonight and write it all out - the breadmaker is on now! I kind of lost the plot with money saving regarding food in earlypart of December. I live in a Housing !!!!!!. house and we had two days to prepare for them coming to put in central heating which is fab, but the upheavel along with working and doing extra work nearly sent me loopy.

When I said I made "chicken curry" using a turkey leg I mean I "called it" chicken curry as "They do not like turkey" - meaning DH and 4 DDs!

Our cheapo list is
'sort of' toad in the hole - made with all sorts of odds and ends like a couple of rashers of bacon rolled up, slices of onion, the odd sausage, halves of tomato etc.
farmhouse grill - this is fridge bottom and freezer clear out stuff, like all the ingredients listed above plus the odd piece of meat, like a single pork chop that is only enough for one person but cut into 2 adds a bit of bulk to this grill
spanish omelette -using bits of pepper, bacon, mushroom, onion, potato, cooked peas etc
fried rice - more bits of the same stuff as listed above combined with rice and fried together, when it's done you move it all to one side of the frying pan, add 2 beaten eggs, scramble them till lightly cooked then combine them with the rice and oddments mixture. serve with a dribble of curry sauce.
cauliflower cheese with bacon and mushrooms and a jacket spud
HM pizza
any sort of pasta bake made with leftovers in a cheese sauce, add cooked pasta and top with cheese and breadcrumbs, bake to heat and crisp up0
