Help please - Kidney Bean Question!

I've just done something very stupid - i've put a chili in the slow cooker for tea, and added the dried kidney beans that were soaked overnight without boiling them first! I've painstakingly picked out every last one, but have i ruined the whole kilo of mince? I don't know whether to chuck the whole lot away, or if it will be ok? Has anyone else done this and survived? I'm happy to feed the rest of the family on sausages tonight and try the chili myself but am i risking spending the rest of the week paying for it????

I'm not an expert, but my understanding is that kidney beans should be boiled for 10 mins to destroy any toxins. I'd have thought it unlikely that they have contaminated the mince, but to be on the safe side you could boil the mince for 10 mins. Are you cooking the beans to add back in?0

In almost every thread where someone asks if they can eat something, I tell them that I would. In this case though, I wouldn't.
Undercooked beans can be more toxic than raw beans.
As few as 4-5 beans can bring on symptoms.
Symptoms of poisoning can include nausea vomiting & diarrhoea.
Slow cookers are a common cause of undercooking & hence poisoning.

However, if you are absolutely determined not to waste it, have a spoonful. Wait for at least an hour or so. If you're ok, eat two spoonfuls. Wait another hour or so. Increase "dose" and repeat until you're convinced it's safe.

You can even get poisoned from eating soaked kidney beans raw, so if they've not been soaked then the risk I believe is much much higher.
For safety sake, bin it. Wouldn't want you to get ill - Kidney Bean Lectin poisoning is nasty :eek:0 -
:think: The more I think about it, the more I think you'll probably be ok. There's nothing to suggest that the protein leaches out from the bean into whatever it's being cooked in. In fact, that's unlikely. The heat is only required to destroy the structure of the protein. You're not eating the beans, only the meat.
Rinse the beans off, give 'em a good boiling, and the toxin should be destroyed as normal.

I'd eat it - after I'd let my OH have some first!! I really think it will be fine - but give the mince a bit of a boil to be on the safe side.0

Agreed, but the beans have now been removed. The question is now whether the toxin leaches into whatever it's been cooked in.If you lend someone a tenner and never see them again, it was probably worth it.0 -
Sorry to say I agree with the others, for future reference I buy mine frozen from Tesco, they are pre soaked and cooked so can be added straight to the Chilli mixture...#6 of the SKI-ers Club :j
