I have a packet of icing sugar lying on the shelf, long since abandoned. I rarely bake other than bread (am single so would have to eat it myself!!!)
How can I use it up?

Sugar never goes off
You don't have to use it up. You could save it for birthday cake icing or you could use it in ice cream, or to sweeten fruit purees, or any dessert where the sugar is heated and melted.

I wouldn't recommend using old icing sugar for making royal icing - I made 2 batches of royal icing for Christmas cakes last year - one batch the icing sugar was 6 months out of date and the sugar was a greyish colour, lumpy and made stiff icing - not easy to work with (tasted fine though). The fresh icing sugar was white, soft and a pleasure to work with! Such a big difference.Save the earth, it's the only planet with chocolate!0 -

. Icing sugar obviously loses quality, but as a general rule sugar is pretty indestructible.

Easy to make and good to give away in cellophane bags as presents. Even nicer if they are half dipped in plain choc!!I like cooking with wine......sometimes I even put it in the food!0 -

Coconut Ice
Ingredients For Coconut Ice:
340g desiccated coconut
340g icing sugar
400g tin of condensed milk
Optional food colouring
Cooking Directions For Coconut Ice:
1. Place the condensed milk into a bowl and add the icing sugar. Beat well then mix in the desiccated coconut. The mixture will get firm and difficult to stir but persevere until everything is all combined.
2. Divide the mixture into two (add optional food colourings to each) and spread into an 8inch square tin giving two coloured layers and allow to set overnight (time for a wee dram!)
3. Cut into small cubes and spread on a sheet of greaseproof paper to dry slightly.
4. Enjoy and remember to share!
Alternative Suggestions:

Mix it with Philadelphia cheese and use as a topping for carrot cake - it's delicious.
Also if you have a shaker put some in there and shake it over puds - especially chocolate ones, or dark summer fruits it will make them look fancy.:j1 -

You can use it to make sweet pastry
You could also substitute it for granulated sugar (for instance, on your cereal).
