Artichokes - What to do with them?

Hi. I am a newbie and have been lurking this amazing site for ages and have now plucked up the courage to post! I have had my first delivery of organic veg and have 2 globe artichokes. I have never had them before and a recipe search doesnt bring up much either (assuming I am doing it right). Any suggestions would be very welcome.

Soak them in salted water for an hour to get rid of any bugs that may be hiding in them.
Cut the stalk off and boil in water to which you have added a splash of vinegar or lemon juice (to stop them going brown). Boil for about half an hour or until a leaf will pull away easily.
Serve warm or cold with melted butter.
To eat - pull away the leaves, dip in melted butter and suck/scrape away the fleshy part of the leaf with your teeth (that's the base of the leaf).
When you have eaten all the leaves you will be left with a fibrous scary looking bit -that's the 'choke'. Don't eat it
Carefully cut the choke away to leave the 'heart' or the base of the artichoke, this should be tender and delicious, eat with melted butter.
It's a performance, but fun, enjoy0 -

Pink, don't want to be picky, but Jerusalem artichokes are completely different from globe artichokes, and are cooked differently.
Jerusalem - root veg, looks a bit like a knobbly potato.
Globe - grows on a stem from a thistle-like plant. Othewise known as artichoke heart.
