I thought I would give them a go!!! I found the recipes on this forum for fudge and truffles and peppermint creams but if I make them now will they keep until Christmas???

Thanks guys my Christmas is sure to be a success this year due to all the tips I have picked up!!!!!!!!!:beer:

  • as far as i'm aware they'll only keep for about a week in total, so need to be made very close to when you're seeing the people that are receiving them!

    someone with better knowledge than me please correct if i'm wrong!

    Hi,now I may be wrong but with peppermint creams the reason you should make them as late as possible is due to the fact that you are using egg white? I have bought some powdered egg white from tesco and to my way of thinking this should make them ok and you can do them well in advance.Is this right do you think??

    Make any truffles as close to Christmas as possible - and make sure you 'scald' the cream (bring it to a simmer) before using - this way they keep for longer (if people can resist them that is!) I've kept them for up to 2 weeks in the fridge using this method.

    Thanks for this. I didn't know about the scalding thing-I thought it would split if I heated it too much?
