As it's winter, how about some of the traditional puddings like bread-and-butter pudding, sponge pudding, apple crumble, lemon surprise pudding etc? Crumble topping can be prepared in advance and frozen. Plums or peaches baked with sugar and flavoured water so that they come out of the oven with lots of syrup.

Cold puddings: banana custard (banana cut up, covered in custard & put in fridge until custard sets); rice pudding (can be coloured with food colouring to make it attractive to kids), jelly.

    Hi Rachie,

Have a look in the Sweets section of the recipe index. There are also lots of pudding recipes on the School days recipes thread that might give you ideas.

    thanks

my list of puds is now a hell of a lot longer than it was this morning lol
  • one of my favourite puddings when I was a little girl, and one which I make for my two DD's now is orange and sugar. It is just an orange, segmented and then cut up, sprinkled with a little bit of sugar and served with evap. I love it and so do the kids. Nowadays I use Tesco healthy eating 9% fat pouring cream instead of the evap but it is lovely with either. It takes seconds to do and it gets some fruit into them!! I also make jelly custard, which is a jelly ( I use Sugar free but doesn't matter which) made up and allowed to set a little, to which you add a pint of HM thick custard - you kind of pour it in in ribbons and it makes a nice pattern in the jelly, and then you let the whole thing set and chill. Today I made a chick pea cake, which is really easy - you just drain and rinse a tin of chick peas and blitz them in the processor with three eggs, four tbs of Splenda, 2tsps of baking powder and two tsps of vanilla extract. Then you stir in a few chocolate chips ( I just chop a block of dark chocolate into big chunks), and bake it in a lined sandwich tin at 170 for about 20 mins. It is fat free, sugar free, gluten free, and tastes lovely!! - DD's both loved it but when DD2 found out it was made with chick peas she wouldn't eat any more!!

*stupid Q alert* :o how do you make milk jelly ? is it made with normal milk or is it condensed ,evaporated

Evaporated milk was always what my Mum used, and therefore what I used. Condensed would be too heavy and sweet I think. However, have no idea of using normal milk, perhaps someone else here has tried and can report?

Can't give you a recipe as such, as it has been such a long time since I've made it. However from what I remember, make up the jelly and allow to cool, whisk in tin of evaporated milk and allow to set in fridge.

Also remember that fruit was added, usually tinned fruit, such as mixed, mandarins etc.
If you want to do this, before making the jelly...................drain the tin of fruit saving the liquid, and make up jelly according to instructions with only a little boiling water, when dissolved add the rest of the liquid from the tin of fruit, and if neccessary, add more water to make up to say 1 pint, if that is the recommended amount on the instructions for the jelly.
    Hope this all makes sense!
