I'm quite impressed as i've stuck to this weeks completely so far. :j Tomorrow may change as I might be going to a BBQ, but it depends on the weather.

Saturday - pasta with bacon in a tomato sauce (with added broccoli as it needs using)

Sunday - BBQ at my dad's. If not, chicken, leek and bacon mix with rice

Monday - bacon omelette with potato wedges

Tuesday - going to see my brother and sister, so not sure. We'll probably go to the supermarket and find something exciting

Wednesday - fish cakes with salad

Thursday - chilli and lime chicken in pittas with salad

    Friday - pasta bake

    Saturday - leftover pasta bake

Sunday - my dad's taking me out for lunch, so no idea!

Hi everyone - I've been on holiday and finding it hard to get back into the groove.....we have been living last week on what was left in the house by our cat sitters, garden produce and freezer content. But off to town tomorrow to the shops, so here is finally a plan.

sat - BBQ of frankfurters, maize and courgettes with HM wedges, georgian beetroot puree and aubergine caviar; Also made BBQ sauce in the SC
sun - SC organic veal roast in madeira sauce (half went to our convalescing neighbour) with peas & lentils, potatoes with garlic and cream au gratin, vegetable purees as above.
mon - shopping in town, back late so need a quick meal: beef in black bean sauce with rice.
tues - beetroot soup with feta, flageolet bean & pasta casserole with gremolata
wed - oven baked fish fillets in almond crust, on bed of fried onion/grated carrot. with couscous salad or tabbouleh.
thur - courgette and red pepper lasagne (SC)
fri - beef & potato pie, salad
sat - courgette and crab gratin with brown rice
    sun - minestrone soup

one of these may be changed for another barbecue if the weather is going to be as good as they tell us :-)

    enjoy your week!

It's based on a recipe from New Covent Garden Book of Soups, though I tend not to bother much with weighing stuff. I also do it in the pressure cooker - it freezes ok as well. Anyway, the proper recipe is
1lb sliced courgettes, 2 medium potatoes peeled & chopped, 1 onion chopped. 2pts veg stock (I use bouillon powder) 8oz brie (I've used a bit less and I've used a little camembert instead if I've needed to use some up) cut in pieces (best to remove rind -sometimes I can't be bothered!)salt & pep to taste
Bring everything except the brie to boil & simmer for 15 mins (or pressure cook on high for 8mins) till everything is tender. Stir in the cheese until melted, then whiz up with hand blender. Taste and season it how you like it. It's meant to serve 6.

    Hope you like it.
