fresh coconut milk - what can i make?

have coconut milk left over after making a coconut cake for fathers day.

i dont want to waste it, so does anyone have any ideas?

    Yep. :)

    You can use it as the base for any mild curry sauce such as a korma. There are a couple of curries in the Old Style collection where you could use/substitute coconut milk for yoghurt or cream or use them in combination.

    Edit: I have a recipe for coconut meringue slices if you'd like to try it. You could sub your coconut milk for the milk in the recipe...

    ..you can also freeze some to save for other days, other meals.

    Cook white rice in it (water sdown if not enough) for Thai rice, good hot or cold with all sorts fo things, just be careful it isn't on a high heat or it will stick & be a real bu88er to clean!

    i dont like curry myself, but everyone else in the house does, so im sure someone must know how to make a thai style curry. i quite fancy the idea of thai rice, may try that one as i find normal rice quite boring :D

    MIL also suggested pina coladas, and is brandishing a bottle of rum. whether any milk will survive for cooking remains to be seen :rotfl:

    I've used it in the past to cook chicken in with sweetcorn and ginger, but the rice pud sounds lovely. Think I'll have to go get some now!
