Aduki Beans - What a fab ingredient

I bought a bag of Aduki Beans many moons ago, when I was intending on following the Gillian McKeith healthy eating regime. Needless to say I never got further than just reading her book and buying a few ingredients.
Anyway, seeing as the cupboard and fridge were bare the other day, I decided to soak some of these Aduki Beans overnight, with the intention of using them the next day. In fact they sat in the bottom of the fridge for a couple of days, so much for good intentions!
But being allergic to throwing food away, I made a concerted effort to use them. So I boiled them up, threw in a hotch potch of ingredients and use them as a mince substitute in a lasagne...............well blow me down it turn out really nice, what a surprise, even my 3 year old and 14 month old enjoy the meal.
I must admit that I wouldn't normally use any sort of bean as a main ingredient, but seeing as they are so cheap, nutritious and tasty they'll be a regular on the menu now.

As I said it was a bit of a hotch potch of stuff, don't ask me about quantities as I tend to just open the cupboard and throw in whatever comes to hand:
Aduki Beans (pre-soaked)
handful of pearl barley
chicken stock
splash of worcestershire sauce
bit of marmite
squeeze of tomato puree
bit of vegetable bouillon
some mushrooms
can of value plum tomatoes
Boiled this all up for about an hour, thickened it up with a bit of flour then made a lasagne as normal layering with a cheese sauce.

My kids are the same age as yours, we are all veggie so eat loads of pulses. Chickpeas seem to be very toddler friendly.Nevermind the dog, beware of the kids!0

My son isn't keen on mince but will eat veggie mince or mince that has lentils padding it out no problem. I've got the Gillian McKeefe(sp?) book too but not done much with it. She doesn't look that healthy herself does she? unless she's 97 in which case she looks great.0

I have made an Aduki bean cottage pie, very very filiing and healthy also cheap..tasted really nice too0

if you want to hide one more portion of veg in there, grated carrot goes great in lasagne, bulks out the mince without losing any meaty flavour.Softstuff- Officially better than 0070

I cooked some aduki beans with rice (in the same pan) and added this to some fried diced carrot and onion and then cooked the lot together with some stock from the cooked beans and some soy sauce. Added a mashed potato top and my son who is a chef found it hard to believe it didn't contain meat! He is trying to find ways of using the mixture in pasties etc. BTW my small sainsbury's has aduki beans at half price at the mo so I am stocking up big time cos they don't go out of date till next year. Thanks for all these ideas. I bought a bag of aduki beans a few months ago and used them to make the soup recipe on the bag, it was delicious, but I was the only one that liked it. These recipes have inspired me to get the bag out and try again on the family. Hope they will be ok as the bags been open for a few weeks now. Do you think they'll be ok if I maybe boil them a bit longer, as I know others on the forum have said beans and pulses go hard once they've be opened a while?

You can also buy bags of frozen Aduki beans from Sainsbury.So you can throw a handful into a dish without having to worry about soaking them!It's not as cheap as a bag of dried beans, £1.99 for 500g, but definitely more convenient!!0
