I have searched and looked all over the internet, including here on OS....but can't't find a recipe for cheese and onion pasties using the puff pastry that is languishing in my fridge....I could make this recipe up, but I would like just some idea of at least what filling to use eg can I use grated cheddar cheese, can I use potatoes, if I use potatoes do I mash them, do I cook the onions before putting them in, is it ok to do all this with puff pastry anyway?... arghhhhh please help

As an educated guess, I would saute the onions and par boil the pots before adding in. I would tend to dice the pots and use grated cheddar cheese
I wouldn't have thought you needed to add egg and yes it would be fine with puff pastry.0 -
I made these last week, they were delicious!
I had some mashed potato from the day before added grated cheddar cheese and 1 grated/finely chopped onion (I used the chopper on my hand blender), and a little salt and pepper.
Mixed it all together, rolled out the puff pastry and cut round a saucer, put a bit of the mix in the middle and brushed round the edges with beaten egg, sealed them, and brushed the top with egg too.
Grease the baking tray well, as they do stick a little, I just cooked until they were golden brown on top. I hadn't done them before, and was so pleased how well they came out, and how easy they were!! Have to say though, I did cheat and use packet puff pastry, as have no idea how to make my own....

Just to add...... if you didn't have any mashed potato already done, rather than making some, you could do some jackets in the microwave, and scoop them out!0

puff pastry
1/2 ounce unsalted butter
2 medium onions, finely chopped
1/2 lb double Gloucester cheese or cheddar cheese, grated
4 tablespoons fresh parsley, chopped
Preheat oven to 400°F.
Melt the butter in a frying pan on a low heat.
Mix in the onions and cook them until they are just beginning to soften.
Mix them with the cheese and parsley.
Roll out the pastry and cut out 4 rounds, each about 6 inches in diameter.
Put a quarter of the cheese mixture on one half of each one.
Fold over the other side and crimp the edges together.
Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
Bake them for 30 minutes and serve hot.0 -
Thank you everyone for replying ... well I made some cheese and onion pasties today for lunch and they were absolutely lovely.... followed Heather38s recipe and added the fizzy feets recommendations on potatoes ..... DD1 went all quiet when eating them ..... thought she hated them and then asked for another :T so I will be making these again and again...... yipee I love puff pastry and now have a good reason to buy it more often as i will be making them for us and for DD1's lunchbox!0
