    This is my favourite fudge recipe. It is so easy and unbelieveably gorgeous! I can't take credit for the recipe, I got it from this forum last year. I don't use a sugar thermometer and it turned out fine :D:

    Baileys Fudge


    500g golden granulated sugar
    500ml whipping cream
    50ml baileys
    150g white chocolate


    1. Butter and line a 22cm x 22cm tin (I use cling film). Put sugar, cream and Baileys in a large pan and, stirring slowly, bring it to a simmer. Make sure the sugar is dissolved (it will stop feeling 'grainy' on the base of the pan), then turn the heat up to a rolling boil.

    2. Adjust the heat until the mixture bubbles without getting too near the top of the pan. Keep bubbling, stirring occasionally, until a small amount of mixture dropped into a glass of cold water will form a soft ball that you can pick up on the end of a teaspoon.

    3. When it's nearing readiness, the bubbles will go from being large and unruly to smaller and more even. Stir in the chocolate and, after it's melted in, pour the mixture into a tin. Cool and cut.

    I have a few more fudge recipes but I haven't tried them myself yet. I'll put them in a second post.

    Ultimate Fudge (possibility to make it rum & raisin flavour)

    Ingredients
    • 397g can Carnation Condensed Milk
    • 150ml (¼pt) milk
    • 450g (1lb) demerara sugar
    • 115g (4oz) butter
    Optional ingredients:
    • 150g (5oz) glace cherries, halved and 55g (2oz) stem ginger, chopped
    • 150g (5oz) dark chocolate chopped and 85g (3oz) toasted hazlenuts
    • 150g (5oz) raisins soaked in 3tbsp rum (until they have absorbed the rum)
    Method
    1. Grease and base line a 20cm (8”) square tin with baking parchment.
    2. Heat the milks, sugar and butter in a large, non-stick saucepan over a low heat, stirring until the sugar dissolves completely. Bring to the boil and simmer over a low heat for 10-15 minutes, stirring continuously and scraping the base of the pan, until a soft ball of fudge is formed when a little of the mixture is dropped into a jug of ice-cold water.
    3. Remove from the heat and beat the fudge until thick and grainy (about 10 minutes).
    4. Gently stir in the remaining ingredients. Pour into the prepared tin and leave to cool before cutting into squares.
    Ginger and cherry fudge
    Ingredients
    · 397g can Carnation Condensed Milk

    · 100g (3½oz) butter
    · 150g (5oz) glac! cherries, halved
    · 55g (2oz) stem ginger, chopped

Bring to the boil and simmer over a low heat for 10–15 minutes, stirring continuously and scraping the base of the pan, until a soft ball of fudge is formed when a little of the mixture is dropped into a jug of ice cold water.
    2. Remove from the heat and beat the fudge by hand until thick and grainy (about 10 minutes).
    3. Gently stir in the remaining ingredients. Pour into the prepared tin and leave to cool before cutting into squares.

  • :jOh NickyBo - Big big thankyou, I really appreciate you sharing your recipes for fudge. I'm def going to start by trying the Baileys one this weekend - can't wait! Everyone I know loves Baileys, so it may well take over the top spot from Rum and Raisin! :rotfl:

    I did the Ultimate one and found it to be too sickly sweet (may be just my taste buds), but I'm definitely giving the Baileys one a try (no condensed milk). Thanks Nicky - you're a star!
