Well I never knew that!

Options
Organising my cookbooks today I came across one for my food processor (magimix) which I had never really openend.... and flicking through it found out that I could make my own cream in it, either single or whipping. If I had a pound for the number of times I wished I'd had cream for a recipe...... well I would be quite rich :rotfl: Is there anything that you have discovered recently that you now do or make that you always bought before?

    Mix together
    125g(4oz) Rice Flour
    50g (2oz) Bicarbonate of Soda
    50g (2oz) Tartaric Acid
    Sieve several times store in screw top jar.

    To make the cream

    Whipping Cream
    4oz (125g) unsalted butter
    3 fl oz (75 ml) milk

    Pouring Cream
    4oz (125g) unsalted butter
    4 fl oz (125 ml) milk

    Heat the milk until almost boiling. Cut the butter into cubes and add to the milk.
    Pour milk and butter into food processor and process for one minute (pref with double-bladed knife). Chill for 24 hours in the fridge and use as required. The whipping cream can then be whipped in the processor.
    I have not tried this recipe yet and can’t see why you need to chill everything for 24 hours but it is soooooooo simple that I am going to give it a go this evening!

    50g Bircarb of soda
    100g Cream Of Tartar

    I can confirm that this works. My Grandma used to make her own 'cream' when she didn't have any real stuff, when I was a child. TBH I can't vouch for it's taste as I wasn't a cream eater in those days, but everyone else used to eat it. It obviously doesn't taste exactly as cream would, but I think it's a fair 'fake'

    I am another person to confirm this works - just made it now and cannot believe it. It tastes nice, a bit heavier than double cream in my opinion though. In fact, I think I've put on a stone just licking the spoon :p
