    It had a great crust. I'm going to have some more for a snack later. I don't have a decent baking tray. The ones I have buckle when the oven is that hot.

    So, GR, you did it in a loaf tin? I'm so glad you liked it.
    That's interesting because if I can do it in a loaf tin I can cut proper slices instead of chunks so it may last a bit longer...........
    Dh is leaning over my shoulder laughing - he says he'll just cut thicker slices!q9crolleyes.gif

    I must admit I don't usually do anything with it other than butter it and eat it for lunch embarrassment.gif

    Yes, I used a loaf tin. We had a snack with it later last night too. DH got some pepperoni slices and had it with that and I used some mexican spicy tartrex paste. There's a little left. Going to toast it for breakfast with poached eggs.

  • GR, Hope you enjoyed your squash bread with poached eggs, though presumably not at 4.56 am! Hope you went back to bed for an hour or two. I'll make the squash bread as soon as my present loaf is finished - probably tomorrow. Hope you're not tempted to eat the lollies. I know that I bake scones/cakes etc. supposedly for DH/DS's lunches and then end up snacking on them myself and then wonder why I've put on another pound or two.

    Hi, Gingham, and everyine else! Glad to know it's summer - certainly doesn't feel like it in my corner of Yorkshire ;)

    I'm doing my menu plan for this week, and came across a recipe for chinese stir fried veg with almonds. It's a bit like this one, but I'll be using veg stock, and some celery. It would go well with whatever veg you have, I think. We'll have it with noodles.

    Thanks, Penny. That looks lovely. Not summery in this part of Yorkshire either! I've got some new veg plants, so hopefully I'll have lots of meals with their supplies soon enough. 5 tomato plants, 2 red peppers, 2 courgette plants, 2 squash and an aubergine. And my strawberry plants have their first ripe one on them. All the veg is on the front window sill for now though. The rain would flatten them!

    Okay, it's been a while since I added any breakfasts or lunches and it's half term so I know I'm not the only one eating at home for 3 meals a day this week (or making picnics if the weather improves) so I'm going to add my full plan this week.

    Brealfasts:

    H/M cereal with chopped dates and apple
    Porridge with raisins and pear
    H/M cereal with banana and dates
    Fruit yum with raisins and pear
    H/M cereal with apple and banana
    Toast followed by grapefruit
    H/M cereal on yoghurt

    Lunches:

    Piadine with feta, lettuce, tomato, spring onion
    spinach and feta pizza and tomato garlic bread
    Broccoli and potato gratin
    Crusty bread with granovita spicy mexican tofu spread, lettuce and spring onion
    Omelette souffle with tomato and feta, lettuce, tomato and spring onion salad
    Hummus with courgette, cucumber and carrot crudites
    Lentil and carrot soup with crusty bread


    Dinners:

    Vegetable tagine with couscous
    Lentil and carrot soup with crusty bread, fruit salad
    Aubergine melts with couscous
    Trollburger with mash and peas
    Cheese and potato pie with beans
    Vegetable tagine with baked potatoes
    Trollburgers with crusty bread, lettuce, tomato and spring onion salad

    Snacks: quick blender orange cake, roasted seeds, kiwi fruit muffins

    Breakfast cereal adapted from More With Less cookbook

    3 cups of porridge oats
    1 cup wholemeal flour
    1 cup sunflower seeds
    1 cup sesame seeds
    1 cup grated coconut

    Spread out in a large, greased baking dish. Mix in, to a total of one full cup:

    honey, treacle, syrup.

    Bake for 30 to 60 minutes, stirring often without allowing to brown.

    It says in the recipe to add dried fruit when cool. I’m going to store it as it is and add fruit at the table, then I can decide each day what I fancy.

    Fruit Yum: Simply porridge made with ground millet and milk and a gated pear or apple added. It is very sweet and gluten free so also serves as a good weaning food.

    Vegetable tagine adapted from BBC GoodFood July issue

    2 chopped onions
    3 courgettes, sliced
    2 tomatoes, chopped
    can chickpeas, rinsed and drained
    4 tbsp raisins
    3/4 pint veg stock
    large handful flat beans
    1/2 teaspoon each of cinnamon, coriander and cumin

    Fry onions until soft and stir in spices. Add courgettes and fry for further 5 minutes. Add everything else and simmer for 10 minutes.

    The recipe says to add the courgettes with everything else but I like to give them a bit longer or they're too crispy for DH who likes them soft. and I used flat beans instead of peas because that's what I have in the veg bag.

    Omelette soufle
    :

    The recipe says to seperate the eggs and whisk the whites until fluffy, then whisk the yolks with some grated parmesan, then add together and whisk again. Fry gently for a few minutes, then top with tomato and feta and place under the grill until there is only the 'slightest wobble'. It says to use fresh basil too but I don't have any so I'll be using dried.
