Slow cooking for 1 or 2 people only.

Hiya,

I have asked this on the slow cooker thread also but no reply as of yet. A lot of the recipes i have seen so far are for large quantities of 8-12 for large slow cookers 3.5l etc.

I have a small 1.5l slow cooker and cook for 1-2 people. Can anyone share any recipes or ideas for 1-2 people. I am a novice and have never used my machine yet.

    Hi,

    If you are just starting, try buying the packet casserole mixes and just add enough meat and veg for two - or your could try cooking more and freezing half. You can also use the jars of mixes until you get the hang of making up your own recipes.

    It's really easy to cook for two, if you haven't got any mixes, throw in some cheap stewing beef, onions, carrots, tin of tomatoes and couple of oxo cubes and about 1/2 pint of water. If you have any potatoes that need using, peel and add those as well.
    You're only young once, but you can be immature forever :D

    I just cook whatever the slo cooker hold & freeze the extra, I don't use recipes, just chuck it in & hope, lol.

    Could you cut some of the recipes down (by a third or quarter?) to fit your slow cooker? Most of the recipes I've collected from here are for 6.5l I think.

    I really only use recipes as a guide though and they are usually flexible. Just use them as ideas for ingredients and then mix up to suit your taste.

    Packet mixes are good in the slow cooker so they would give you a few options to start.
    ... don't throw the string away. You always need string! :D

    I do a big batch in my SC and heat it up for the next day - this week it's chicken and sausages done in a tomato sauce and it's going to keep me going for 4 days - into the fridge and just reheat the required portions. Maybe I'll get bored with it, but I make the side dishes different each day to get a bit of variety. I get home late from work so it's great not to have to cook for myself. :D

    Two chicken breasts and tin of chopped toms with herbs etc should fit into your cooker!

    Lentil and carrot soup:

    A mugful of dried red lentils
    1 largish potato sliced thinly
    3 chopped or grated carrots
    stock to cover
    1 crushed garlic clove

    I do it on high for about 3 or 4 hours.
    May all your dots fall silently to the ground.

    Thanks for that soup recipe as I can adapt that to suit my tastes.

    You can just reduce the proportions on the bigger recipes found on this forum :)

    If you find a recipe for a 3.5l cooker, divide in half. If you find a recipe for a 6.5l cooker, divide in quarters. The recipe will still work and taste just as good :)

    Did your slow cooker come with a basic recipe book? Most do, and it should give you an idea of the proportions and amount of food you can fit in it.

    My first recipe in my 3.5l slow cooker was a sausage casserole. I've put the amounts you need in blue.
    6 sausages (use 3)
    1/2 small red cabbage, shredded. (use 1/4)
    1/2 lb mushrooms, roughly quartered. (use 1/4 lb)
    1/2 pint cider (you can use wine, stock, or just water). (use 1/4 pt)
    1 tin tomatoes. (use half a tin)

    Brown the sausages in a frying pan. Put in slow cooker.
    Briefly sauté the cabbage and mushrooms in the fat from the sausages. Put in slow cooker.
    Sprinkle over your seasonings of choice (I used salt, pepper, sage, thyme).
    Pour over cider and tomatoes. Top up with enough water to cover the sausage and veggies. Give it all a bit of a stir.
    Cook on medium for as long as it takes to do your maths coursework, go round Tescos and watch a bit of telly (about 8 hours). Or high, if your cooker doesn't do medium.
    Serve with something starchy.

    Edit to add: you can exchange the sausage for meat of your choice. You can exchange the cabbage and mushrooms for any veggies you like. This should just give you an idea of the quantities and proportions that work.

    For a treat, I cook lamb shanks in the slow cooker, with rosemary and garlic, they are about £5 for two in a pack at waitrose.

    ummmm that sounds nice what else do put in the SC with it? I am on the hunt for a SC, anyone know any good deals?
