  • I found this on another web site posted by a lady called Marshie and it sounded nice for a sunday, when you want to save your points for your sunday lunch.


    NO POINT MUSHRROOM SOUP

    Ingredients

    400g Mushrooms
    1x medium onion chopped
    1 chicken or veg stock cube
    Half tea spoon of wholegrain mustard
    Tea spoon of light soy sauce


    Method

    Mix stock cube with 1.5 pints of water. Cook onion slowly in a little of the stock Add the wholegrain mustard and soy sauce and rest of stock once onion has softened a bit add chopped mushrooms and cook on medium heat for about 10 mins. Leave to cool then blend untill smooth



    Want it Creamy
    Add 2 low fat cheese triangles before blending. These are 0.5pts each.
  • Syn free Lasagne (serves 4)

    454g Quorn mince (or very lean beef mince at 2 syns per 28gms)
    250ml passata
    Mixed herbs and black pepper
    1 red pepper, finely chopped
    250gms mushrooms, finely chopped
    1 large onion, finely chopped
    Lasagne sheets (as many as you need)
    454g tub virtually fat free natural cottage cheese
    250g tub Quark
    30g Parmesan
    100g reduced fat Cheddar
    (The Parmesan and RF Cheddar amount to 1 HEB per serving)

    In a non-stick large pan, dry fry the mince until browned. Add vegetables, passata, herbs and black pepper, and cook until veg are softened.
    Mix the quark, cottage cheese, Parmesan and Cheddar together.
    Spray an ovenproof lasagne dish wih Frylight and layer the meat mixture, lasagne sheets and cheese mixture, finishing with a layer of cheese mixture.
    Bake in a hot oven (180*c) for approx 40 minutes until heated through and topping is golden brown
    I let my mind wander and it never came back!

  • Meatballs:


    450g minced meat of your choice
    1 level tbsp chopped parsley
    seasoning
    1 crushed clove of garlic
    ½ level tsp cumin
    1 egg

    Sauce:


    2 onions finely chopped
    1 level tbsp tomato puree (½ syn)
    pinch grated nutmeg
    400g tin tomatoes
    ½ level tsp sweetener

    Place all sauce ingredients in pan and bring to the boil. Reduce heat and simmer gently for 10 mins while making the meatballs.
    Place meat, garlic, herbs and seasoning into a bowl and mix until well combined. Add the egg and mix well again.
    Divide into small balls and carefully add to the sauce - cover pan and simmer for 20 mins to cook the meat.

    Serve with vegetables of your choice.


    This can also be made with turkey mince - add finely chopped button mushrooms to moisten, as turkey mince can be a little dry.

    Hope this one will do - not muffins but a lovely cake:-
    Carrot Cake (11 syns for the whole cake)
    4 Scan Bran* (crushed)
    5oz carrot (grated)
    1 tsp cinnamon
    1 tbsp runny honey
    3 eggs (beaten)
    1 Weetabix (crushed)
    ½ tsp mixed spice
    1 tsp nutmeg
    2 tbsp mincemeat

    Pre-heat oven to 180C/350F/Gas Mark 4.
    Place all the ingredients into a large bowl and mix well.
    Turn the mixture into a lined tin, cover with foil and cook for 30 minutes. Remove foil and cook for a further 30 minutes.
    Cool on a wire rack

    Microwave Carrot Cake (1HEB and 4 syns)



    4 Scan Bran & 1 Weetabix crushed together (one HEB)

    8oz Finely Grated carrot
    4 eggs
    1 tsp Mixed spice
    ½ tsp cinnamon
    2 tbsp sweetener
    2 tbsp sweet mincemeat - 4 syns

    In a food processor mix the ingredients to form a cake mixture.
    Pour into a shallow dish that has been sprayed with frylight.
    Cook in microwave on high for 12-14mins until soft and sponge like in the middle.
    Once cool transfer to plastic bag and keep in the fridge for up to 5 days.

    *Hint: For a Free frosting mix together 4oz quark, 1 tbsp granulated artificial sweetener and 1 tsp vanilla essence - delicious

    Quorn pieces with mushroom stroganoff:
    (serves 2)
    Schwartz mushroom stroganoff mix (4.5 syns on SW)
    about 1lb of chopped mushrooms
    chopped red or green pepper
    chopped onions (1 large or 2 small)
    150g Quorn pieces (more if you want)
    milk and/or water to mix

    In a large pan, fry the onions with frylight until they start to soften, then add the peppers and continue frying for a few minutes. Add the mushrooms and Quorn pieces, stir, then cover the pan and cook over a low heat until the veg is tender. Add milk and/or water to packet mix and stir until smooth, then add to the pan, stirring until it thickens.

    As an optional extra add a tablespoon of mango chutney and stir in.

    Serve with rice or spaghetti.

    Vegetable Bake topped with Goat’s Cheese and Herbed Lemon Breadcrumbs

    1 medium onion, sliced
    1 clove garlic, crushed
    1 red pepper, char grilled and sliced
    1 yellow pepper, char grilled and sliced
    2 courgettes, sliced
    250g closed cup mushrooms, sliced
    1 400g can chopped tomatoes
    50g wholemeal breadcrumbs
    100g goat’s cheese
    Grated rind and juice of half a lemon
    1 tsp herbes de provence
    Mix the breadcrumbs, herbs, lemon rind and juice.

    Heat a largish pan and spray with Fry Light, add the vegetables and fry until beginning to soften. Add the tomatoes, stir and continue to cook for a few minutes.

    Pour into an ovenproof dish (or individual ones) and slice the cheese over the vegetables. Sprinkle the crumb mixture on top.

    Put under a medium grill until the cheese has melted and the crumbs toasted.
    I wish that I could be the oldest AND wisest....sadly it's not the latter :p but my time will come _party_ wooooh hoooh! Beware!!!!!!!

    COURGETTE GRATIN

    450g courgettes, sliced
    1 large onion, chopped
    1 400g can chopped tomatoes
    200g dried whole wheat pasta, boiled
    1 tsp Herbes de Provence
    2 eggs
    150ml low fat yoghurt
    50g low fat cheese, grated
    Salt and freshly ground black pepper

    Fry the courgettes in Fry Light until lightly browned, set aside.
    In a saucepan, fry the onion in some Fry Light until soft. Add the herbs, tomatoes, salt and pepper and simmer for about 10 minutes.
    Add the cooked pasta to the tomatoes, and pour into a baking dish.
    Layer the courgettes on top.
    Beat the eggs and stir into the yoghurt along with the cheese and seasoning and pour over the courgettes.
    Bake in oven (190C) for 30 minutes until golden.
    I wish that I could be the oldest AND wisest....sadly it's not the latter :p but my time will come _party_ wooooh hoooh! Beware!!!!!!!

    Hi Petrichor. Does that courgette gratin bake like a frittata? I might make that for my flatmate who loves courgettes, although she'll be looking for the meat in it! lol How many servings does that recipe do, is it for 2? Thanks.
