    Pasta Alfredo

    25g lard
    25g flour
    about a pint of hot stock
    60g cheddar
    15g gran padano
    1 heaped tsp mustard powder
    50g bacon
    400g pasta

    Make a roux with the fat and flour. Add the hot stock in about 4 goes. Between each addition of stock stir the mixture until all the liquid incorporates into the flour and butter. (If you lift the pan off the heat and beat hard with a wooden spoon after the liquid is incorporated your sauce will be beautifully glossy). By the time all the liquid is added you should have a sauce which will coat the back of a spoon. If not add more water or stock. Stir in the mustard and most of the cheese. Leave a spoonful of cheese for the top.

    Fry finely chopped bacon. Add cooked bacon to the sauce and season sauce with pepper and salt.

    Stir sauce into cooked pasta.

    Put saucy pasta in baking dish. Top with remaining cheese. Shove in oven at 180 until there are nice brown crunchy bits on the top.

    stuffing tester required!

    Frankie and family tried the stuffing, but aren't mad keen on stuffing generally, so kinda hard to guage (hope I've not misquoted you there Frankie!)

    Is anyone having anything for supper this week which would be nice with some stuffing? And if so would you please be willing to try our recipe?

    I have a question me lovelies...is it just me or do the increase in lentils/pulses/onions affect anyone else in the same way as me or am I an oddity?!! Can confirm that the bread with readybrek in is yummy (linky to recipe perchance weezl?) and very light for those that find the no knead bread a tad brickish! Am waay behind on posts (been trying to get kesters blanket finished!) and wonder if people who tried the no knead prefer the readybrek - its alot lighter and actually rather yumme me thinks! I love my version of no knead (has a nob of butter in) but will admit it can be a bit heavy for sandwiches and the like...anyway of to have another go at the blanket (called a babette blanket for those who may be even remtely interested!!...linky here

    Aless your linked paul merritt recipe is the one I use too, it makes lovely bread.
