Christmas Cake help please

I'm about to start making my Christmas cake using St Delia's magic recipe but I've run out of Angostura bitters. I don't really want to spend £5 on another bottle to use 1 1/2 tsp and then be shoved to the back of the cupboard 'til next year.

Has anyone tried making this cake without them and is it ok? Does it really add much to the overall flavour or should I just buy it anyway and add it to my vodka, lime and lemonade cocktails :whistle:

  • If you were given 2 cakes, one with bitters in and one without, I bet you'd never be able to tell which one had the bitters in. I make Delia's Christmas pud which calls for a tbsp or so of ginger wine (which isn't that cheap) I always replace it with more brandy.

    So my advice is to make up the amount with brandy or other spirit that you already have. Whisky is good in cakes as is rum ;)

  • Candied peel is those little bits of sugared (candied) citrus peel you can buy in tubs next to the glace cherries and angelica.

  • :rotfl: Angelica is green stuff that you decorate cakes with :D It's the candied stem of the angelica plant- think it's a herb.

    Thanks, I always make it with brandy instead of whiskey so I'll just add a bit more! Now noticed I've no molasses so will probably have to use treacle instead. Think this is going to turn out to be a hotch potch version :rotfl:

  • Again I bet you can't tell the difference between black treacle and molasses when it's baked in a cake - it certainly won't taste bad far from it.

    Most traditional recipes for Christmas cake contain brandy and black treacle. Delia is a recipe writer - she's got to keep coming up with new ideas. Trouble is, there aren't really any new ideas in cookery just slight variations to make them seem new. Have confidence in your own ability to make a good recipe :)

  • I know I already put this on the Christmas support thread, but I love it - makes me giggle every time!

    My Favourite Christmas Cake recipe

    1 cup of water
    1 tsp baking soda
    1 cup of sugar
    1 tsp salt
    1 cup of brown sugar
    2 cups of dried fruit
    lemon juice
    4 large eggs
    nuts
    1 bottle Vodka

    Sample the vodka to check quality. Take a large bowl, check the vodka again. To be sure it is of the highest quality, pour one level cup and drink.

    Repeat

    Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar. Beat again.

    At this point it's best to make sure the vodka is shtill OK.

    Try another cup .... just in case Turn off the mixerer.

    Break 2 leggs and add to the bowl and chuck in the cup of dried fruit.

    Pick fruit off floor.
    Mix on the turner.

    If the fried druit gets stuck in the beaterers pry it loose with a drewscriver.

    Sample the vodka to check for tonsisticity.
    Next, sift two cups of salt. Or something. Who giveshz a !!!!.

    Check the vodka.

    Now shift the lemon juice and strain your nuts.

    Add one table.

    Add a spoon of sugar, or somefink. Whatever you can find.

    Greash the oven.

    Turn the cake tin 360 degrees and try not to fall over.

    Don't forget to beat off the turner.

    Finally, throw the bowl through the window and finish the vodka.
