Christmas Buffet ideas

You could do coronation chicken but with the turkey, or turkey wraps/fahitas (tortillas are easy to make). Most people have tinned tuna/salmon in so with any leftover mash (could even do extra for it) fishcakes. I think you can do a simular thing to fishcakes but with meat ie the turkey/pork, think they are called rissoles?
I do a thing for the veggies which is like sausage rolls but stuffed with grated cheese and onion mmmmmm.
Slices of the cold meat with nice chutneys (either buy cheap or make your own-some don't have to mature for months)
Mince pies are cheap and cheerful for puds.
The pastry should freeze fine so the sausage rolls, vol au vents, mince pies etc can be done now and frozen for later.

A very nice dip is made by blending together a pinch of chilli, mixed herbs and garlic with half greek yogurt and half mayonnaise. You can vary it by adding a pinch of paprika for red and turmeric for yellow.
Same base but with chopped cucumber, garlic and mint is a nice tzatziki with a twist (the mayonnaise).
Hope you and all your guests enjoy the buffet! Finally I'm an OAP and can travel free (in London at least!).0 -

Wow..Some fab ideas.. I really cannot thank you all enough
Today I have made some mini cheese and onion pasties... DH tried one and they went down well with him so they are now in the freezer .. Thanks for the idea Zippychick
I have also made some Pastry squares, with some left over tomatos, cheese, ham and onion.. They too turned out great..
Oooh and Iv done the voluvant cases which turned ok too.. I have frozen these and will do the filling prior to cooking them on boxing day.
I really cannot thank you all enough for the ideas as I have made all the above with bits and bobs I had lurking in my fridge so no cost were involved really and I have managed to use up all the bits instead of throwing them out.
Tomorrow I plan to do a variety of mini pizzas and I have found some cooked chicken pieces lurking in the back of the freezer so will have a think what I can do with those.
I will definitely be giving the dips ago.. Think I will wait till the weekend to try those out.. Would it be possible to freeze them if they turn out ok?October grocery Challenge

Sounds like you are well on top of things! Yay!
I don't think I would freeze dips - but you could make them the day before or even a couple of days to develop flavour (keep in the fridge). Plus they are so quick to whip up you could even make them on the day x
Are you using the cooked chicken in the Vols? On the pzzas? Coronation chicken for min sandwiches (bulked out with nuts/seeds/apricots - what ever you want !) Just watch = if your chicken is cookd now, I would only recook it once more (but I'm sure you know that, so sorry If I'm teaching you how to suck eggs)
A little nonsense now and then is relished by the wisest men

Drumsticks with different coatings go down well - my lot's fave is a good sprinkling of all purpose seasoning and baked in the oven.
Palmiers are cheap and easy to make and so are cheese straws.
Home made pizza, scotch eggs, streaky bacon rolled around little pieces of dairylea and grilled are yummy so are portabello mushrooms stuffed with rice.
raw veg julienned and served with a variety of dips
Make a trifle it always goes down wellBlessed are the cracked for they are the ones that let in the light

OK - these are all dips, mostly mayo based.
HM coleslaw - shred cabbage, carrot and onion. Mix in mayonnaise, add drop of lemon juice/vinegar, salt and pepper. Seal in plastic tub and leave overnight. Can even get coleslaw haters eating it and finishing the tub when you're not looking.
HM pickly thingy - slice cooked beetroot, cucumber and grated carrot. Put in plastic tub. Add vinegar (I like the mildness of rice vinegar), oil, a teeny bit of dijon mustard and a sprinkle of sugar. Seal tub, shake well. Leave overnight in fridge.
Ultimate dip - mayonnaise, lemon juice, salt, pepper, grated garlic and sprinkle of paprika.
Blue dip - mayonnaise or creme fraiche or cream, blizted with leftover blue cheese.
Yummy and much cheaper than buying dips.I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll0 -
And Gabriella's chicken - chuck chicken bits into an easily cleaned oven dish. Toss in bashed garlic cloves, salt, pepper, a glug of vinegar (any kind) and some sugar. Roast, turning occasionally, adding more sugar if necessary. If you fancy some heat, add some chillies (but I don't).I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll0
