i love making a cheese and potatoe pie but for the kids.its now called cheesey bean pie
i make it like this
you need
bag of potatoes
bag of cheap grated cheese
2 tins of beans
pack of two part cooked baguettes
small amount of marge/butter
garlic granules
mixed herbs/parsley
splash of milk
i boil the potatoes until soft
then mash, add knob of butter and splash of milk, then add most of the cheese and mix through. then add a tin of beans.
pour mixture into big pyrex dish and use remainder of the cheese over the top. put in the oven, i put it in electric oven at about 180 for approx 20-30 mins till all the cheese is melted.
next get your part baked baguettes, slice in inch thick slices. mix garlic, spread and herbs together and spread between each slices.
wrap in foil and put into the ove, they take about 15 mins.
heat the other tin of beans and serve over the cheesey bean pie with wedges of garlic bread:D
its really yum and lasts a couple of days.
i sometimes also serve it with sausages or bacon too and my son loves it

I made the fruit cake above. the flavour is lovely, but it just hasnt really risen? Is it a rather flat cake or have i dont something wrong? the texture inside is good, airy etc.

This was a really nice recipe but with the quantities given didn't rise for me either. However if you use 5oz of marg and 5 oz sugar and 8 oz self raising flour, and 5 oz fruit plus 3 eggs, in a 7 inch round tin, then it rises perfectly and you get a beautiful and tasty cake. Costs a very small amount more, but its a bigger cake so get more servings out of it.

My menu plan for the next few days.
yesterday - broad bean couscous with stewed tomatoes and garlic.
today - mushroom pizza and lettuce
friday - cauliflower cheese and new potatoes + veg
Saturday - courgette frittata and new potatoes + cabbage stewed with tomatoes and onion.
Sunday - beanburgers with new potatoes + veg
Guess what came in the veg box? Yes, that's right, broad beans, tomatoes, mushrooms, cauliflower, lettuce, courgettes, onions
Also a red cabbage. What can I do with that?0 -

shread finely and add a chopped green apple or 2 [depending on size of cabbage] also a finely sliced onion or 2.
place in casserole dish add a small amount of water and bake slowly for a couple of hours.
if you like you can add a teaspoon of cumin powder too.
it keeps well in the fridge.
