    Hi hope everyone is okay. I am still quite new to this so please bare with me if I have posted this in the wrong place.

    My partner and I have recently just got our first house and unfortunatley I lost my mum. This is the type of thing that I would have turned to her about so was so grateful when I saw this thread and wondered if anyone can help.

    I am trying desperately to save this year and am not the best cook in the world ( should have paid more attention to mum - she was a wonderful cook).

    I have noticed my eggs go out of date tomorrow and wondered can you freeze egg mayonnaise? And also does anyone have any other good ideas for things to do with eggs? I can make scrambled, french toast and omelettes (well kind of!!!)

    Sorry to hear about your mum...

    I'm afraid I'm not sure about freezing egg mayo, although my instinct says no (something about the mayo freezing doesn't sound right to me...) but maybe somebody will come along shortly and correct me on this!?! :confused:

    However, I do know that you can freeze Spanish omelette/tortilla/frittata-type foods very well and I often do this when I have eggs going out of date (and veggies looking a little sad in the bottom of the fridge which need using up...). Also, quiche freezes well if you can find a recipe you like for that.

    Good luck with whatever you decide to do, and well done for trying. If all else fails, you could look at it the way I do when deciding whether something will freeze...

    "If I'm going to throw it away anyway, I'll try freezing it and see what its like when I defrost it - if it was going in the bin anyway, I've nothing to lose if it ends up in the bin after defrosting...and it might be OK, in which case, its a bonus!!" .

    my instinct says no (something about the mayo freezing doesn't sound right to me...)

    Mayonnaise is one of the few things that you can't freeze I'm afraid. I think it de-mayonnaises itself in the freezing process. Sorry.

    You can freeze the egg whites though. Put them in a tub labelled with the number. They can be used for meringues and cakes.

    I think your best bet for using eggs for the freezer is to make them into cakes and freeze those.

    Eggs actually last a lot longer than the date on the box. If they are off they will float in a bowl of water

    the date on the egg isn't set in stone! Eggs will be fine for at least 3 weeks past that date. I've eaten eggs regularly past the date on them, I'm fine.

    freezing cooked egg white isn't a good idea, goes horrible imo. Mayonnaise will lose its emulsion and 'split'.

    Thank you all so much for taking the time to get back to me I really appreciate it. I think Im going to go with the non floating tip this time. I think I was at the influencial age when Edwina Curry highlighted salmonella and its freaked me out since. Thats a shame about egg mayo as its so easy. Spanish Omelette sounds nice Piglet.

    Egg mayo will keep for 2-3 days covered in the fridge.
